TASTING INFO:
Entremanos takes a patient, traditional approach to tequila, producing small‑batch Blancos from 100% mature Blue Weber agave. Slowly cooked, naturally fermented with wild yeasts in the Valle de Amatitán, and double‑distilled without additives, these tequilas put the character of the agave and its place of origin squarely in the glass. For this tasting, we’ll explore four different expressions of Entremanos Blanco - together, they offer a fascinating look at how subtle variations in production and proof can reveal very different sides of the same agave.

Welcome 🍊 to our Cocktail of the Moment: The Burnt Orange!

From our Owner, John Roenigk:

“And to kick off Longhorns football 2026, we want to share one of our favorite cocktails, The Burnt Orange!

In a bowl-shaped (Burgundy) glass: 1 (quite) large ice cube or ice sphere, pour in 6.8 ounces (the entire contents of a 200 ml bottle) of Fever Tree Club Soda, then 4 or more ounces (depending on the sharpness of the edge of the day) Crémant de Bourgogne or other preferred dry sparkling w**e, and 1½ to 2 ounces of Contratto Apéritif. Stir gently/briefly. Garnish, if you like, with a nice swath or large twist of fresh orange peel. Et voilà ! Consume with or without a sunset. Guaranteed to refresh all those who would be refreshed.”

A steamy weekend ahead in the ATX (yet thankful for recent rains!) C’mon downtown for a taste of four crisp whites that span the Italian peninsula - well-chilled to help cool your brow! We’ll start in the north in the Veneto with a lovely Soave featuring the Garganega grape then move eastward to Friuli-Venezia-Giulia for a white blend featuring Friuliano and Sauvignon Blanc. The back half of our journey takes us far south to Mount Etna in Sicily for a w**e composed of Carricante and Cattarato (can you smell the charred rock?) We’ll finish in the middle of the boot in Umbria with a delightful Orvieto white blended from Procanico and Grechetto. All of these w**es will offer you a taste of the “wonderful difference” of Italian grape varietals - most of these are only found in Italy!

“A project of Giampaolo Venica, en hommage to the great Hermitage Blanc of Jean‑Louis Chave and, oh yes, like Hermitage Blanc, this w**e is characterized by its most tactile qualities; an inspired blend of biodynamically‑farmed, hand‑harvested 80% Friulano and 20% Ribolla Gialla fruit from several small parcels of vines ranging from 60 to 80 years in age overlooking the village of Buttrio and planted to soils with alternating layers of marl and thin sheets of sandstone which allow for w**es with great body and refinement. A bit of aeration serves to reveal more of this w**es' aromatic slate: a hint of lime peel, green/golden Friulano berries, a reminiscence of stone and subtle hint of something like hazelnut cream or bitter almond; fully tactile onto the tongue, smooth, slippery even and ever so soothing/mollifying in texture, so richly fruited without any sort of heaviness; indeed a worthy hommage to the great Hermitage Blanc, but with a decidedly northeastern Italian accent.”

The Chollet estate has been making sparkling w**es in Savigny-lès-Beaune Burgundy since 1955, twenty years before the creation of the Crémant de Bourgogne appellation. French w**e law dictates that any Crémant must be made in the same method as the w**es of Ch*****ne (Méthode Champenoise) - with the secondary fermentation for the bubbles completed in the final bottle - and specifies the region (via the “de” or “of”) where the grapes are cultivated. As of 2002, sons Gilles and Joel Remi are leading the family business - continuing to respect the traditions and knowledge of previous generations while investing in modernization of the w**ery and w**emaking process and increasing the breadth of their Crémant offering. The Boatyard Distillery, (named for the abandoned yard it’s built on) is situated on the banks of Lough Erne, County Fermanagh, North West Ireland and was the town’s first legal distillery since 1890. This Organic, juniper-forward Gin is macerated for 18 hours with eight different botanicals…including Sweet Gale from the family farm - a fragrant, resinous shrub that thrives in wetland soils. The “Double” in the name refers to a double-infusion of Juniper - once macerating in the still and then again in the v***r chamber…a process Dutch Genever distillers would term ‘dubbel gebeide genever’.
