Bottled up some pink lemonade that has been aging since 4/2025, 10% abv. The lemon is stronger now compared to beginning of racking because the sweetness of the strawberry is much weaker than the lemon. In my experience, so far, working with lemon meads takes a good 4 years or so for the flavor to mellow out and have a smooth balance. Getting ready for more mead!! I still have 10 gallons of the new Fafnismal (Hefeweizen) that is on its first rack, so I’ll make more after this next brew. I’m thinking that the 793 and Valkyr will the first ones to get started. Honey is also a little scarce right now so we’ll see how things play out. Which one of these have you tried and/or which is your favorite!? 🍻

I’m glad that I’m working on this recipe now and not later. Both are identical in yeast and ingredients. One has stopped fermenting and left several pounds of honey untouched, while the other has dissolved all honey and is projected to end fermentation in approximately 5 days.
