Earning the rare distinction of two Jasper Morris 5-star wines – awarded to less than 10% of wines tasted across the year – with budding young winemaker, William Waterkeyn, Burgundy’s Young Talent of the Year 2020 at the helm, this under-the-radar Burgundy producer is gaining critical acclaim for its elegant and fine wines. A historic plot for the domaine, Les Gravières is rich in gravel and limestone from the Combe de Saint-Aubin. STONEVIK is a natural wine created in nature by nature, where the most holistic organic and biodynamic practices have been applied. VIK developed the concept of “barroir” – fusing ‘barrel’ and ‘terroir’ – and created toasted barrels made of oak from their own land. These estate-crafted barrels imbue their wines with the flavour of their terroir. They also developed “amphoir” – combining amphora and terroir – to make proprietary amphoras of clay and kaolinite from their own Millahue vineyards, adding mineral notes, flavours and aromas that are unique to Millahue. Bringing the two revolutionary concepts together, the wine is fermented in native VIK-toasted oak barrels for one moon, then aged in handmade native VIK clay amphoras on the mountain of Los Mineros. A blend of Cabernet Franc, Cabernet Sauvignon and Carménère, 𝗩𝗜𝗞 𝗦𝗧𝗢𝗡𝗘𝗩𝗜𝗞 𝟮𝟬𝟮𝟰 ($̶𝟮̶𝟰̶𝟬̶ $𝟭𝟵𝟵) is a pristine, floral expression of cassis, tapenade, Mediterranean herbs, paprika and blueberries aromas, with a touch of wet stone. Presented in a limited-edition Year of the Horse box, this fresh-faced, zesty whisky is matured from hand-selected, first-fill, sherry-seasoned European and American oak casks, which together deliver its main flavour profile of spicy sweetness and mellow warmth. Additional refill casks round out the powerful notes from the first-fill casks, resulting in a classic, versatile whisky that is always finely balanced. Fresh, clean and floral on the nose, with heathered honey and a touch of citrus. Sweet and spicy on the palate, with toasty notes of burnt orange, jasmine and fruitcake. A long finish with peppery spice, woody notes and orange zest, and the subtle, aromatic kick of smoke that you only get from Orkney heathered peat.
