Karinderia hits 😋

“Keboy Espina asked a question whether Indians, and not the Chinese, introduced the carinderia to the Philippines. Well yes, if we are talking about the etymology of the term carinderia. During the Spanish colonial period, eating places that served pansit (noodles) were called pansitan in Tagalog or pansiteria in hispanized Tagalog. On the other hand, eating places that served curry were called karihan in Tagalog or carinderia in hispanized Tagalog.

During the British occupation of Manila (1762-64), the British troops brought with them Indian soldiers (Sepoys). When the British troops withdrew in 1764, the Sepoy soldiers were left behind and settled in the towns of Cainta and Taytay. They established curry food stalls in the area. Tagalogs called the dishes as kari (curry) and the food stalls as karihan. The hispanized form of karihan was carinderia. Eventually, carinderias served other dishes aside from curry.

The attached picture (courtesy of Ambeth Ocampo) shows a karihan established in 1923 by Artemio Ricarte in Yokohama when he was in exile in Japan. The restaurant was called Karihan Luvimin, referring to Luzon, Visayas, and Mindanao. It is interesting to know that curry dishes were introduced from India to the Philippines and then to Japan. Eventually, curry dishes in Japan further evolved into the now popular Japanese curry.” - Prof. Nestor Castro PhD
