No Oven! No Bake! Bibingkang Malagkit

Ingredients:
▪️4 cups water
▪️125 grams panutsa( or you can use dark brown sugar)
▪️1 kilo malagkit/glutinous rice
▪️1 cup coconut cream
▪️1 tsp. salt
▪️1 tsp. Anise seeds

For latik sauce:
▪️2 cups coconut cream
▪️250 grams panutsa(or dark brown sugar)

Instructions:

▪️In a pan with medium heat, boil coconut milk and coconut cream together. Add salt, anise seeds, pandan essence and green liquid food color. Stir properly and let it boil then reduce heat to low.
▪️Add the washed glutinous rice grains. Continuously stir and cook for 10 more minutes or let the mixture thicken until it’s nearly dried out.
▪️In an 8x12 and 6x6 baking pan with banana leaf, transfer the cooked glutinous rice. Set it aside.
▪️In a saucepan prepare the topping by mixing coconut cream and sugar cane molasses (can also use brown sugar). Let boil and simmer while stirring once in a while until the sugar cane molasses (panutsa) melted and combined with the cream.
▪️Spread the topping equally over the cooked sticky rice and then place it inside the preheated pot for 20-30 minutes(cover with a flat steel containing charcoal fire) cook until topping becomes really thick and dark (not burnt).
▪️Remove from the pot and set it aside to cool down.
