The Paloma is the drink Mexicans actually drink more than the Margarita. Tequila, grapefruit, lime, a pinch of salt. It is refreshing in a way that is hard to explain until you have had a good one. We use the 30-30 Blanco for this. Bright agave, clean finish, plays well with citrus. Add a dash of Dashfire Lime bitters and it sharpens the whole drink without adding more juice.

50ml 30-30 Blanco / 100ml fresh grapefruit juice / 15ml fresh lime juice / 10ml agave syrup / pinch of salt / Dashfire Lime bitters. Build over ice in a highball, salt rim optional.

Most home bars have a bottle of Angostura somewhere at the back of a cupboard. That is a start. But bitters are actually one of the most versatile things you can add to your setup, and the range of what they can do is much wider than most people realise. Dashfire Lime in a Paloma instead of extra lime juice. Cardamom bitters in a Mezcal Old Fashioned. Fee Brothers Black Walnut in a Whiskey Sour, where it adds a dry, earthy depth that changes the whole character of the drink. We carry over 50 different bitters. If you are going to be behind the counter, you might as well have the right tool. Most home shakers are cobbler sets with a built-in strainer that leaks after six months and a cap that gets stuck when it is cold. Bartenders do not use those. They use tin on tin. The 47 Ronin shakers we sell at Cane & Grain are the right size, the right weight, and seal properly. You shake hard, it stays closed. That is the only thing that matters in a shaker. Cocktail suggestion!

A Daiquiri has three ingredients. Rum, lime, sugar. That is it. Which means there is nowhere to hide, and the rum does most of the talking. We use the Botran Blanca Reserva for this one. It is a Guatemalan white rum that is cleaner and more structured than most, with a subtle sweetness that means you do not need to overdo the sugar syrup. Shake it hard, strain it cold, drink it fast.

60ml Botran Blanca / 30ml fresh lime juice / 15ml sugar syrup. Shake with ice, double strain, coupe glass.

New arrivals!

Arran 14 Year Old — Single malt from the Isle of Arran, Scotland. Fourteen years in ex-bourbon casks give this one a clean, coastal character with vanilla, citrus, and a gentle spice. One of the most approachable age-statement malts from the island distillery.

Shenk's Homestead Bourbon — A seasonal release from Michter's, inspired by a 19th-century Pennsylvania distillery. Soft and sweet, with stone fruit, honey, and an easy warmth. Each batch is a little different, this one's worth grabbing while it's here.

Old Forester Bourbon — The original. George Garvin Brown's 1870 recipe, still going. Warm oak, dried fruit, and a spicy finish. A no-nonsense Kentucky straight bourbon that earns its place behind any bar.

Akashi White Oak Sherry Cask — Japanese single malt finished in sherry casks. Rich and layered: dark fruit, toffee, subtle nuttiness. A nice reminder that Japan can do sherry-forward whisky just as well as anyone.

The story behind the bottle:

Wynand Fockink has been around since 1679. That's not a marketing line, that's just a fact. From a small distillery on the Pijlsteeg in Amsterdam, they have been making Dutch liqueurs and jenevers the same way for centuries, and they see no reason to change that.

The tasting room looks like it did a hundreds of years ago. No rebrand, no redesign, no trendy labels. Just good spirits, made with care, sold to people who know what they are looking for.

What sets them apart is the range. Wynand Fockink produces dozens of jenevers and an almost overwhelming selection of traditional Dutch liqueurs, each with its own name, its own story, and its own recipe that has been around longer than most countries. From classic oude jenever to fruit liqueurs and herbal digestifs, there is always something new to discover, even if the recipes themselves are anything but new.

Alipus is a social project where nine independent family distilleries in Oaxaca bottle their own mezcal under one name, each with full creative freedom and no binding contracts. Real people, real craft, no compromise. Mezcaleria Berlin

The San Andrés comes from Santa Maria La Pila, high in the Oaxacan hills, made by Don Valente García Juárez using traditional roasting, native yeasts and small copper pot stills. Espadin and Bicuishe agave, earthy, smoky, complex and honest to its core.
