A sincere thank you to the 12 discerning guests who joined us at CUTS in Rosewood Phnom Penh, for an evening of the Wine Cellar Series.
It was a pleasure to help host such an intimate gathering, celebrating the art of pairing. Chef Thol curated an exceptional 4-course menu that perfectly complemented a journey through Italy's finest vineyards.

Highlights of the evening included:
* Cured Salmon paired with a crisp, elegant white.
* Exquisite Seared Duck and a show-stopping Slow-Cooked Mayura Tomahawk.
* A final indulgence with a selection of Truffle Manchego, Comté, Brie, and Camembert.

Established in 1886 as the 16th bonded winery in Napa Valley, Freemark Abbey is considered one of the first Cabernet producers in the region. It was catapulted at the front of the world wine scene 🌎 with during the 𝟏𝟗𝟕𝟔 𝐉𝐮𝐝𝐠𝐦𝐞𝐧𝐭 𝐨𝐟 𝐏𝐚𝐫𝐢𝐬, showing both a red and a white✨

First created in 1993, Overture by Opus One is a traditional “second wine” meticulously crafted with organically grown fruit from the estate vineyards. The fruit is harvested and
vinified with the same care, precision, and attention to detail as 👌Thanks to a deep understanding of the property’s vineyards by winemaker Michael Silacci and his teams, each block is vinified separately and evaluated before blending. The wines that tend toward fresher, herbal red fruit and supple tannins go into . 2021 is its 𝐟𝐢𝐫𝐬𝐭 𝐯𝐢𝐧𝐭𝐚𝐠𝐞-𝐝𝐚𝐭𝐞𝐝 𝐛𝐨𝐭𝐭𝐥𝐢𝐧𝐠, a piece of history 🙌

An amazing dinning moment, showcasing young talented students from PSE, letting their creativity speak to concoct a 6-course Menu, inspired by Théo Vallier’s artwork, and backed by Pépé Bistro’s team. Very proud to take part to this beautiful collaboration with 4 of our wineries: Radford Dale🇿🇦, Yalumba🇦🇺, Montes🇨🇱 and Château de Haute-Serre🇫🇷

✨🌊 𝐑𝐞𝐟𝐥𝐞𝐜𝐭𝐢𝐨𝐧𝐬 𝐨𝐟 𝐂𝐢𝐠𝐚𝐫 & 𝐒𝐞𝐚 🌊✨

Truly an indulgent night, starting with the pairing of a curated selection of wine from us, and a delightful array of fine seafood tapas, courtesy of Mekong Fine Food.

With appetites sated, 'Act Two' of the evening included an excellent selection of whiskies and cocktails from Moonshine Spirits Compass Box brand, alongside our historical 1986 Armagnac from Château de Laubade. All of it enjoyed in good company and an even better selection of Cuban Ci**rs, provided by Cigar World.

A huge thank you to all those who attended, and stay tuned for our next event!
