Most of our wines will be sourced directly from the producer, from trusted negociants and wine merchants. Wine maturity periods, serving temperatures, lengths of time needed for decanting, and food pairing all have a significant impact on the enjoyment of wines.

Last week, we had the pleasure of hosting an intimate Champagne dinner at at the Kowloon Shangri-La, featuring Jean Garandeau, Managing Director of .

Early summer calls for chilled bubbles, perfectly paired with delicate sushi and crisp tempura. Unlike traditional Champagne houses, Jacquesson bottles their NV Cuvée No. 7XX with a single vintage base, capturing the unique personality of each year. This raw, vintage-driven approach ensures every bottle tells its own story.

An intimate evening at with PM Chan owner of , discovering how terroir shapes the voice of each wine.

We tasted two exquisite Chardonnays, a Bourgogne Blanc 2021 (France) and Clutha Left Bank 2023 (New Zealand), followed by a flight of Central Otago Pinot Noir—Explorer, Surveyor Thomson, and Rows 76–89—each showing a different side of the vineyard. The journey concluded with the classic Gevrey-Chambertin Les Evocelles 2020 from Burgundy.
