Domaine Marnes Blanches Bulle Ton Body NV重新到貨。阿爾薩斯天然氣泡酒，以1978年種植的Pinot Blanc與 Auxerrois老藤釀造。帶青蘋果🍏、海鹽、燧石氣息，氣泡細綿。仲有Charles Dufour Bulles de Comptoir #13。有人會將Dufour 比作”Aube嘅Selosse”：熟蘋果、蜜餞檸檬🍋，收結長同帶鹹。Antonin Cosnier Pernand-Vergelesses En Caradeux 1er Cru 2022 同樣回歸，清爽、充滿礦物感，適合佐餐。

今次第一次有Torocco Winery🇯🇵。葡萄來自北海道余市 Yoichi，日本極具潛力的冷涼產區之一，擅長芳香品種。今次有Torocco Kerner 2024上架：花香、柑橘感鮮明，僅出產1,017瓶。

新到 Domaine Nowack S. A. - Sans Annee NV，來自Vandières的Meunier和Chardonnay的小農香檳🍾，礦物中帶一點堅果香。勃艮第部分有 Jean-Pierre Guyon、Marc Colin et Fils 同 Cécile Tremblay 嘅出品。

德國紅酒有Karl Haidle Stettener Gehrnhalde Lemberger Trocken Grosses Gewachs 2021🇩🇪，來自德國符騰堡（Württemberg）產區：黑莓、月桂葉、煙燻，結構清楚。鍾意舊年份加州 Zinfandel嘅，有 Grgich Hills Estate Sonoma County Zinfandel 1988🍷：乾果、香料，同埋豐富深度。

😳Legrand Latour葡萄園底下，有樣其他香檳莊冇得比嘅嘢：一個巨大、人手開鑿嘅地下世界，既係酒窖又係博物館，充滿4500萬年前嘅海洋化石🤯。喺Fleury-la-Rivière，Thibault Legrand嘅父親喺2004年因發現化石貝殼開始挖掘🐚🌱，慢慢發展成一個250米長嘅Caves aux Coquillages。2017年佢離開合作社自己釀酒，父親特地再多挖洞穴嚟擺木桶同酒。

Thibault唔用除草劑、幾乎唔犁地，用手將葡萄藤枝編織起嚟。佢深信地質對其酒嘅個性影響最大🧡所以佢每款酒都以葡萄根下嘅古老岩層命名。

酒窖保持純粹：原生酵母、純重力、幾乎無硫。2020年起，部分酒款用Agrapart Method，新鮮葡萄汁代替糖做二次發酵，酒就唔會增加額外酒精。裝瓶後每支喺佈滿化石嘅洞穴用木塞瓶陳30至40個月，再人手除渣🍾

😳Beneath the vines of Legrand Latour lies what no other Champagne producer can claim: a hand-carved cellar-museum filled with 45-million-year-old marine fossils🤯. In Fleury-la-Rivière, Thibault Legrand’s father began digging in 2004 after finding fossilised shells among the vines🐚🌱. Curiosity grew into a 250-meter “Caves aux Coquillages.” When he left the cooperative in 2017, his father carved more caves for barrels and bottles.

Thibault farms without herbicides, with almost no tillage, and braids the shoots by hand. He believes geology plays the greatest role in his wines' identity🧡 — so every cuvée is named for the ancient rock layer beneath its roots.

Cellar work stays pure: native yeasts, gravity only, and virtually no sulfur. From 2020, certain cuvées use the Agrapart method: fresh grape must instead of sugar tirage, so the wines gain no extra alcohol. Every Champagne then rests on cork 30–40 months in those fossil-lined caves before hand disgorgement🍾

由巴斯克講起，Alfredo Egia Izaki 2023係Bizkaiko Txakolina，同大家熟悉嗰種清淡、微氣 Txakoli 完全兩回事。金色、鹽感、有質感——好可能係你未試過嘅巴斯克白酒。產量得4000支。

再入Castilla y Leon嘅Cantalapiedra。Majuelo del Chiviritero 2024 來自1981年卵石石灰岩地塊，Verdejo有洋甘菊、核果、礦物風味，收結爽脆。附近Majuelo el Espejo 2023來自1999年山坡葡萄園🌱，土更淺，張力同餘韻更長——熟梨、茴香、香草，配合礦物感的支持。

In Castilla y León, Cantalapiedra’s Majuelo del Chiviritero 2024 is Verdejo from a 1981 pebbly limestone plot: chamomile, stone fruit, chalky core, crunchy salty finish. Neighbour Majuelo el Espejo 2023, from a 1999 hillside plot🌱, shows more tension and length — ripe pear, fennel and herbs over a mineral spine.

Envinate works abandoned old-vine sites with non-intervention. Palo Blanco 2022 is 100-year-old Listán Blanco on Tenerife’s black volcanic soils🌋, no malolactic: saline, electric, tense, with preserved lemon, seashells🐚 and volcanic rock.

Last, Spain at its best🍷: Marqués de Murrieta Castillo Ygay Gran Reserva Especial 2005. Violet, spice, walnut and dark fruit. A serious, age-worthy classic.

Benjamin Leroux係勃根地少數既能保留經典風味，又有自己獨特個性嘅釀酒師💕。呢位來自Beaune嘅第一代酒農，從來都冇繼承過葡萄園，但正正就係呢個「無」成為咗佢嘅起點。24歲嗰年，佢接手Domaine Comte Armand，喺度渡過咗15年時光，學識有機同生物動力法耕作，同埋點樣由得葡萄藤自由發揮。2007年佢正式自立門戶，而家已成為 Cote d’Or 最受酒界追捧嘅名字之一。

Benjamin Leroux is one of those rare Burgundy voices whose wines feel both classical and completely his own💕. A first-generation vigneron from Beaune, he never inherited vineyards—yet that absence became the spark. At twenty-four he took the reins at Domaine Comte Armand and spent fifteen formative vintages there, learning organic and biodynamic farming and the quiet art of letting vines speak. In 2007 he launched his own project and has since built one of the Cote d’Or’s most admired ranges.

Finding mature Champagnes and well-aged classics in good condition can take time, patience, and a bit of luck🙌. We’ve recently secured a selection of mature Champagnes from the 1980s and 1990s, along with a few well-aged still wines. These bottles are already developing the depth and complexity many of us look for.

🤫唔使再只諗住 Bonnezeaux 產區經典甜白詩南啦。Chateau de Bonnezeaux呢個小酒莊而家以另一種更有吸引力嘅風格出名——純淨、礦物感強嘅Dry Chenin🤩，嚟自重新復活嘅老藤。

經過幾十年荒廢之後，Chateau de Bonnezeaux喺2012年由Guyonne Saclier de la Batie重新經營，靈感來自當地乾型白詩南先驅Mark Angeli同Stephane Bernaudeau。而家由Pierre Boisseau同Léa Meslet接手，管理九公頃葡萄園。佢哋以有機方式耕作，採用生物動力做法，產量極低，人手採收，自然發酵。酒液喺舊橡木桶熟成，唔澄清唔過濾，以Vin de France裝瓶，展現每塊片岩地塊個性💛

呢啲白詩南以濃郁、香氣、鮮爽同突出礦物感見稱。產量極少，老藤帶來嘅濃郁同清晰風土特色，令佢哋越來越受追捧。

🤫Forget the classic sweet Chenins of the Bonnezeaux appellation. This Loire estate - Chateau de Bonnezeaux - is now known for something far more compelling — pure, mineral-driven dry Chenin Blanc🤩 from old vines brought back to life.

After decades of neglect, it was revived from 2012 by Guyonne Saclier de la Bâtie, inspired by dry-Chenin pioneers Mark Angeli and Stéphane Bernaudeau. First vintage released in 2016. Work continues under Pierre Boisseau and Lea Meslet across nine hectares. They farm organically with biodynamic practices, very low yields, hand harvesting and spontaneous fermentation. Wines mature in older oak, bottled unfined and unfiltered as Vin de France, letting individual schist parcels speak clearly💛.

These Chenins stand out for density, perfume, freshness and striking minerality. Production remains tiny, so the wines are increasingly sought after for old-vine concentration and clear vineyard character.

La Minée-Haute 2023 – SW-facing vines planted 1997/98. Broadest and most powerful of the two 2023 Minée wines: ripe orchard fruit, quince, spice and waxy richness with saline finish.

La Minée-Basse 2023 – Older 1991/92 vines. More lifted and energetic, with pear, exotic fruit, smoke and lanolin supported by taut mineral edge.

Vieilles Vignes du Fief Prevost 2021 – Estate’s oldest vines🌟 (1975/76). Most structured and age-worthy: lemon, beeswax, white flowers, honey and flint after 4 years in older oak.

Our hearts are with the entire Champagne Moussé family after the serious fire at their winery in Cuisles last week.

Thankfully no one was hurt, but a large part of the production facilities was damaged, along with some of the stock. The cellar held far more than bottles — it represented years of work, research, care for the terroir, and the values that shape every bottle they make.
⠀
We remain in close contact with them. They are already looking ahead with quiet determination, and we will support them however we can in the months to come.

🇮🇹好少有酒好似Tignanello咁，喺意大利酒入面佔咁重要位置。Antinori侯爵家族喺1970年代初創製，佢係Chianti Classico 最早唔再加白葡萄嘅紅酒之一，亦係第一支用Sangiovese做主、用法國橡木桶陳年，同埋第一款將 Sangiovese 同 Cabernet Sauvignon、Cabernet Franc 混釀嘅酒🍇。佢促成咗Super Tuscan運動，但始終忠於托斯卡納根源——優雅、有細膩而帶粉感的單寧同精緻質感。

酒來自Tenuta Tignanello一個山坡葡萄園，土壤富含石灰岩、marine marlstone、schist,同galestro，加上較高海拔同夜涼氣溫，有助保持新鮮感同香氣精準度💗，同時令葡萄充分均衡成熟。結果Sangiovese清新有力，而Cabernet Sauvignon及Cabernet Franc則帶來深度、顏色同結構。

2005同2014兩個年份嘅 Tignanello 而家都正喺飲用佳期，同時仍然有繼續陳年發展嘅潛力🍷。呢啲酒適合慢慢細味——令一個夜晚感覺更加從容有品味。

🇮🇹Few wines hold the same place in Italian wine as Tignanello. Created by Marchesi Antinori in the 1970s, it was among first reds in Chianti Classico to drop white grapes, the first Sangiovese-based wine aged in barriques, and the first to blend Sangiovese with Cabernet Sauvignon and Cabernet Franc🍇. It helped give rise to Super Tuscan movement, yet remained true to Tuscan roots — elegant, with fine chalky tannins and refined texture.

Wine comes from a hillside vineyard on Tenuta Tignanello estate. Its limestone-rich soils of marine marlstone, schist, and galestro, together with higher altitude and cool night temperatures, help preserve freshness and precision💗 while allowing grapes to reach full, balanced ripeness. The result is Sangiovese with lift and definition, while Cabernet Sauvignon and Cabernet Franc add depth, color, and backbone.

We are featuring two mature vintages at 𝐬𝐩𝐞𝐜𝐢𝐚𝐥 𝐩𝐫𝐢𝐜𝐞𝐬 till Aug 10:

👑Tignanello 2005 : Dark and full of character, offering black cherry, smoke, earth and spice. It has settled into a beautiful stage of its life, with depth and personality in equal measure.

👑Tignanello 2014 : A study in elegance and harmony. The aromatics are captivating, the flavours finely drawn, and the overall balance effortless. A wine of real poise and quiet pleasure.

Both the 2005 and 2014 Tignanello are drinking wonderfully now, while still holding potential to develop further🍷. These are bottles that invite unhurried enjoyment — the kind that make an evening feel a little more considered.
