Simon Colin而家越嚟越受注目🌟，成為Chassagne-Montrachet好有潛力的年輕釀酒師。

他出身於村中最知名的家族之一🏡。祖父Michel Colin-Deleger建立了備受尊崇的酒莊，之後分畀Simon Colin父親Philippe Colin同叔叔Bruno Colin。其他家族分支仲有Joseph Colin、Marc Colin同Pierre-Yves Colin-Morey。Colin呢個姓氏喺Chassagne好有份量，亦設下咗好高嘅標準。

Simon Colin早年與父親（包括在勃艮第同南非）及叔叔Bruno共事，並曾擔任Domaine Etienne Sauzet助理釀酒師，因此很早形成自己的釀酒理念。2017年他開展小型negociant項目，以自由實驗。項目至2021年成績已相當出色，他爸爸遂將約9.3公頃交託俾他，包括Les Vergers、Morgeot及其他一級園，另有Saint-Aubin、Santenay及Maranges的葡萄園。

葡萄園已轉為有機耕作（由2024年份起獲認證），並在可行範圍內採用生物動力法。釀造手法低調現代：自然發酵、謹慎處理酒泥與硫磺，並結合木桶、大桶及混凝土蛋。整體着重清新、通透與風土表達，使果味與礦物感保持突出。

Simon Colin is quickly becoming one of the most compelling young voices in Chassagne-Montrachet🌟.

He comes from one of the village’s most recognizable family lines🏡. His grandfather, Michel Colin-Deleger, built a respected estate later divided between Simon’s father, Philippe Colin, and uncle Bruno Colin. Related branches include Joseph Colin, Marc Colin, and Pierre-Yves Colin-Morey. The name carries weight in Chassagne—and sets a high bar.

Working with his father (including in Burgundy and South Africa), his uncle Bruno, and as assistant w**emaker at Domaine Etienne Sauzet, Simon developed his own ideas early. In 2017 he began a small negociant project to experiment freely. By 2021 the results were strong enough that his father handed him roughly 9.3 hectares, including excellent parcels in Les Vergers, Morgeot and other premier crus, plus sites in Saint-Aubin, Santenay and Maranges.

He converted the vineyards to organic farming (certification from the 2024 vintage) and applies biodynamic practices where possible. In the cellar the approach is quietly modern: spontaneous fermentations, careful lees and sulphur management, and a mix of barrels, larger vessels and concrete eggs. The focus is freshness, transparency and terroir so fruit and minerality stay central.

Guillaume Gilles係而家Cornas最令人興奮嘅釀酒師之一。佢最初跟Robert Michel做學徒，再喺Hermitage跟Jean-Louis Chave四年🙂‍↕️，2007年開始自己酒莊。Robert Michel退休後，Guillaume Gilles租返佢舊有嘅Chaillot部分葡萄園，而家仍然喺Cornas市中心Michel屋下嗰個歷史酒窖釀酒同陳年。

Guillaume Gilles is one of Cornas’s most exciting w**emakers today. He trained with Northern Rhone traditionalists—apprentice alongside Robert Michel in the village, then four years with Jean-Louis Chave in Hermitage—before founding his domaine in 2007. After Michel retired, Gilles rented part of the old Chaillot holdings and still vinifies in the historic cellar beneath Michel’s house.

He works old massale vines on steep granite slopes by hand, with low yields and organic farming. In the cellar he stays hands-off: whole-bunch fermentations with native yeasts, no fining or filtration, and 15–18 months in older demi-muids. The w**es are pure, expressive Cornas—deep and spicy, with real energy and balance that drinks well young yet ages beautifully.

'𝐂𝐨𝐭𝐞𝐬 𝐝𝐮 𝐑𝐡𝐨𝐧𝐞 𝐋𝐞𝐬 𝐏𝐞𝐲𝐫𝐨𝐮𝐬𝐞𝐬 𝐑𝐨𝐮𝐠𝐞' comes from old vines on sand-and-clay flats covered with large galets, vinified exactly like his Cornas. Savoury and energetic, it’s far more serious than a typical Cotes du Rhone—essentially a mini-Cornas. '𝐂𝐨𝐫𝐧𝐚𝐬 𝐍𝐨𝐮𝐯𝐞𝐥𝐥𝐞 𝐋𝐞𝐬 𝐑𝐢𝐞𝐮𝐱' grows higher on white-granite slopes at 400–450 meters: the brighter, more fragrant of his Cornas, with lively red fruit and spice, moderate alcohol, and a freshness Michel recognized as recalling the Cornas of the 1970s and ’80s.

Eben Sadie喺Swartland做咗超過二十年🇿🇦，一直專注土壤健康同旱作老藤，釀造上亦盡量少干預。呢種做法令到杯中嘅酒有一種特別清晰、純粹嘅感覺。佢用自然發酵同最少干預，釀出嚟嘅The Sadie Family酒，風格更接近細緻嘅 Rhone 或 Loire，而唔係偏重嘅南非酒。呢種以葡萄園為本嘅精確特質，正正係吸引酒迷關注 Swartland同The Sadie Family嘅原因。

There’s a particular clarity to the way Eben Sadie works in the Swartland—more than twenty years of attention to soil health and old, dry-farmed bush vines, with a light hand in the cellar. Natural fermentations and minimal handling give the Sadie Family w**es a precision closer to thoughtful Rhone or Loire examples than heavier South African styles—site-driven character that has drawn serious attention.

That focus runs through Die Ouwingerdreeks (Old Vine Series). 'Skurfberg', old Chenin Blanc on Citrusdal red sandstone, is powerful yet taut, mineral and saline. ‘Kokerboom’, a rare Semillon Blanc and Gris blend, is richer and more textural, with beeswax and tropical notes kept fresh. The reds follow: ‘Soldaat’, transparent and perfumed Grenache from higher sandstone slopes; ‘Pofadder’, bright, charming Cinsault on iron-rich slate; ‘Treinspoor’, a firmer, structured Tinta Barocca on alluvial soils of sandstone, granite and quartz that needs time to open.

While the Old Vine Series highlights specific micro-terroirs, Palladius and Columella take a broader view. ‘Palladius’ gathers many Swartland white varieties into a layered, textured blend; ‘Columella’ does the same for red—complex and finely tannic across multiple vineyards.

Andre Chemin 唔算係人人口中嘅名字——而呢點正正就係重點。酒莊喺1948年成立，而家由第三代嘅 Eva 同 Sébastian 接手。家族喺 Reims 山脈（Petite Montagne de Reims）山坡上嘅 Premier Cru 村落 Sacy 同 Écueil，以有機方式耕作一個細規模葡萄園。呢支酒用 100% Pinot Noir 釀成🍇，個性比香檳成日講嘅精緻紅果風格更深沉。一開樽先聞到泥炭、鼠尾草同月桂葉嘅輕輕氣味，跟住慢慢展開桑葚、香桃木同深色 Pinot 果香，細緻嘅鹹鮮感一直貫穿其中。

The w**e’s depth comes from 57% perpetual reserve, while malolactic fermentation, at least 15 months on lees and a very low 3 g/L dosage keep it precise rather than heavy. The finish is chalky, savoury and firmly anchored in its mountain terroir.

佢喺Jura兩種經典風格之間游刃有餘🤩：ouillé係將酒桶填滿，保留新鮮度、張力同清澈香氣；sous voile 則讓酒喺酵母膜下慢慢陳釀，慢慢長出鹹香、堅果同鮮味嘅層次。佢嘅Chardonnay 同ouillé Savagnin強調輕盈、清晰同風土個性，而sous voile嘅酒則更深沉、更有鹹香複雜度。

Francois Rousset-Martin is a Jura producer based at Nevy-sur-Seille who treats the veil of yeast as a precise instrument rather than a fixed tradition💝, using both ouillé and sous voile across roughly ten hectares of organic vines. Savagnin sits at the heart of the estate, alongside Chardonnay, Poulsard and Pinot Noir.

He moves fluently between the two classic Jura styles🤩: ouillé, where barrels are topped up to keep freshness, tension and aromatic purity, and sous voile, where the w**e matures under a veil of yeast and develops savoury, nutty, umami complexity. His Chardonnays and ouillé Savagnins emphasise lift, clarity and site expression, while the sous-voile w**es develop greater depth and savoury complexity.

The w**es are made parcel by parcel on clay, limestone and the blue and grey marls that give Jura whites their mineral intensity. Each site is vinified separately with indigenous yeasts, aged on fine lees, and bottled unfined, unfiltered and without added sulphur. The result feels alive rather than engineered.🌱

Vincent Gaudry喺Sury-en-Vaux，想釀出仍然品得出當地風土嘅Sancerre🌟。《葡萄酒評論》畀咗佢兩星，正好點出呢個方向：「佢留心聽古人講過嘅嘢。低調嘅Vincent Gaudry，想把他認為已經失傳的Sancerre白酒帶回來。」

佢係產區最早放棄化學藥劑嘅人之一。九十年代中開始做有機，之後轉生物動力，一路順住塊地嚟做。11公頃，葡萄藤平均超過四十年，大部分係Sauvignon Blanc，少少Pinot Noir，種喺三種令Sancerre成名嘅土壤：silex燧石土帶張力，terres blanches白土帶結構，caillottes石灰石碎土帶香氣。

酒窖入面，佢識得等。天然酵母，蘋果酸乳酸發酵任由佢完成，長時間待在細酒渣上，不澄清不過濾，二氧化硫大約只有當地慣常用量一半。唔係那種明亮、早熟嘅Sauvignon：有深度、有張力，礦物感骨幹🫶。

呢份耐心見於兩款cuvée：年份有佢想要嘅能量，先至裝瓶。兩款都少，都在大舊木桶放大約兩年。Pour Vous 2022來自黏土白堊土上超過五十年的老藤，比較開放：熟蘋果走向焦糖蘋果塔，濃郁但收得住個核心，尾韻長，帶一點暖香料。A Mi-Chemin 2022來自Saint-Satur燧石土，聞起來成熟、好親近，入口之後收緊，燧石和香料風味，需要時間。一款好親近，一款更有勁。並排一齊飲，先見到佢心目中嘅Sancerre。💝

Vincent Gaudry, in Sury-en-Vaux, is after a Sancerre that still tastes of where it was grown🌟. Revue des Vins de France gave him two stars and caught the aim: “Listening to the ancients, discreet Vincent Gaudry wish to reconnect with a white Sancerre taste he considers lost.”

Among the first to give up chemicals, he went organic in the mid-1990s, then biodynamic, trying not to force the land. Eleven hectares, vines averaging over 40 years, mostly Sauvignon Blanc with a little Pinot Noir, sit on the three soils that make Sancerre: silex for tension, terres blanches for structure, caillottes for perfume.

In the cellar he waits. Native yeasts, malolactic left to finish, a long rest on fine lees, nothing fined or filtered, sulphur at roughly half the local norm. Not a bright, early Sauvignon: depth, tension, a mineral line that feels considered🫶.

That patience shows in two cuvees he bottles only when the year has the energy he wants. Both limited; both about two years in used foudres. Pour Vous 2022, vines over 50 on clay-chalk, is the open one: ripe apple toward tarte tatin, a compact core, a finish that stays, warm with spice. A Mi-Chemin 2022, off flint at Saint-Satur, seems ripe then tightens — flint, spice, a line that will not let go. One generous, one electric. Side by side, the point of his Sancerre is there. 💝

2022係勃艮第有紀錄以嚟其中一個最乾、最熱、最多陽光嘅年份。高溫一度令人擔心葡萄藤受壓、果實過熟；但六月落過雨，加上採收唔趕，最後反而出到一批風格一致嘅紅酒。評論多視它為現代經典：魅力與香氣更接近2017，帶少少2015嘅熟果層次，但更新鮮、更輕盈💗

入口以黑車厘子與黑加侖子為主，中段飽滿，單寧絲滑，酸度足夠，整體有活力。較好嘅地塊大概可以放八至十五年，亦不太會明顯封閉。

選對地、處理細緻嘅酒莊在2022尤其有利。Pommard同Volnay喺Cote de Beaune紅酒表現特別出色；Cote de Nuits入面，Vosne-Romanee以香氣同深度脫穎而出。Nuits-Saint-Georges參差啲，但最好嗰批有力度、有活力。平衡得最好嘅，係熟果同柔滑質地之間，仍然保住新鮮、通透同細緻單寧。

可先由呢幾支開始：Fourrier Gevrey-Chambertin Vieilles Vignes與Hudelot-Noellat Chambolle-Musigny，村級已見魅力；Launay-Horiot Pommard Les Rugiens Bas 1er Cru與Henri Gouges Nuits-Saint-Georges Clos des Porrets 1er Cru，一級園有結構有力度；Coquard-Loison-Fleurot Clos de la Roche，則從特級園睇呢個年份。

We have just welcomed some 2022 red Burgundy into the shop, ready to take home. If you like Pinot Noir that is ripe and generous yet still fresh, this vintage is an easy place to start. Selected w**es are 𝟓% 𝐨𝐟𝐟 through Oct 12.

2022 was one of Burgundy’s driest, warmest and sunniest years on record. Heat raised fears of stressed vines and overripe fruit; June rain and an unhurried harvest produced consistent reds instead. Critics call it a modern classic: closer to 2017 in charm, with a touch of 2015’s ripe-fruit depth💗, though fresher and lighter.

The w**es speak in black cherry & blackcurrant, with a richer mid-palate, velvety tannins and enough acidity to stay lifted. Better sites should drink well for eight to fifteen years and are unlikely to shut down hard.

2022 rewarded the right sites and sensitive handling. Pommard and Volnay delivered especially successful Cote de Beaune reds; Vosne-Romanée stood out in the Cote de Nuits for perfume and depth. Nuits-Saint-Georges was more variable, but the best are powerful and energetic. The most convincing w**es balance ripe fruit and supple texture with freshness and fine tannins.

Bollinger La Grande Annee係酒莊嘅旗艦年份香檳🍾，只用Grand Cru及 Premier Cru葡萄，而且只在達到Bollinger標準嘅出色年份先釀造。經酒渣長時間陳年之後，最能展現酒莊本色。La Grande Annee 2014緊緻而有活力，有柑橘、蘋果同梨，餘韻清爽利落。La Grande Annee 2002氣泡仍然細緻，口感豐富，金蘋果、檸檬、香料貫穿，餘韻長而圓潤。La Grande Annee 1999有氧化風格嘅堅果同烘烤感，但酸度仍然清新；氣泡幼細✨，帶麵包、烤堅果同少少蜜糖風味。

R.D. Extra Brut 1981 喺酒渣上陳年 18 年，1999 年除渣。酒色深琥珀帶銅光，層層展現杏仁醬、核桃、白花同焗蘋果，再有鹹焦糖味。已經成熟，味道仍然集中，狀態非常好。🫶

Bollinger R.D. Extra Brut 1981 spent 18 years on the lees and was disgorged in 1999. Deep amber with copper tints, almond paste, pecan, white flowers and apricot, then salted caramel and burnt sugar. Fully mature, still concentrated, and singing.🫶

Northern Rhone好多酒莊都由山坡上一個家族園地開始。呢一間唔係——由Verin一個後花園🏡，同兩個從未擁有過葡萄藤嘅人開始。

Graeme來自紐西蘭，Julie喺羅納河谷長大，兩人喺Ampuis的Stephane Ogier工作時認識。背後無家族葡萄園，產區現成嘅地又買唔到。2015年佢哋喺Vérin山坡買到一間小屋；屋外嗰片荒園已經喺AOP Condrieu入面，隔籬就係Coteau de Chery同Chateau-Grillet。酒莊就由呢個花園起步🌱：清灌木、親手砌返石牆，喺風化花崗岩上種Viognier。第一造酒係2016。之後喺Condrieu、Cote-Rotie、Saint-Joseph同Seyssuel繼續種，合共約12公頃——仍然全人手耕作🙌，每塊地分開採收、分開釀造。

細量、低干預。酒係清新、當代，唔係追求厚重。Viognier提早採收鎖住鮮活酸度；Syrah溫和萃取，多數用舊木桶陳釀。喝起來明亮精準——石感同香料多過厚實。正因為永遠由風土出發，先至會出現喺我哋舖頭。

Condrieu 2018 — 張力多過華麗嘅 Viognier。青蘋果、蜜瓜、碎石；絲滑，收結富柑橘氣息。

Kamaka Terroir de Seyssuel 2019 — 來自Cote-Rotie河對岸雲母片岩嘅Syrah。Kamaka係毛利語「石頭」嘅意思。花香，幾乎似 Pinot，帶香料、鹹味同細緻單寧。

Cote-Rotie 2017 — 來自Ampuis一帶片岩嘅Syrah。紫羅蘭、黑櫻桃、野草同胡椒；接觸空氣後單寧變得絲滑。

Most Northern Rhone domaines start with a family name on a hillside. This one started with a garden in Vérin 🏡 and two people who had never owned a vine.

Graeme is from New Zealand; Julie grew up in Rhone. They met at Stephane Ogier in Ampuis, with no family vineyard behind them. In 2015 they found a small house on the Vérin hillside; the overgrown garden already sat inside AOP Condrieu, next to Coteau de Chery and Chateau-Grillet. That ground became the first piece of the domaine 🌱: scrub cleared, walls rebuilt by hand, Viognier planted on decomposed granite. First vintage 2016. They now farm about 12 hectares across Condrieu, Cote-Rotie, Saint-Joseph and Seyssuel — still by hand 🙌, each parcel picked and vinified on its own. That site-first habit is why they belong here.

Small lots, low intervention. Fresh and contemporary rather than built for weight: Viognier picked early for acidity, Syrah handled gently and aged in mostly used oak. Bright and precise — stone and spice more than bulk.

Condrieu 2018 — Viognier with tension rather than opulence. Green apple, melon and crushed stone; satiny, tangerine finish.

Kamaka Seyssuel 2019 — Syrah from mica-schist across the river from Cote-Rotie. Kamaka is Maori for stone. Floral, almost Pinot-like, with spice, salt and fine tannin.

Cote-Rotie 2017 — Syrah from schist around Ampuis. Violet, dark cherry, wild herb and pepper; tannins that turn silk with air.

Few names in Burgundy carry the weight of Henri Jayer. Emmanuel Rouget learned the work beside his uncle, Henri Jayer, bottled his first Echezeaux in 1985, and in 1989 released the first Cros Parantoux under the Rouget label — the vineyard Jayer had pulled back from neglect and made legendary. 𝐓𝐡𝐚𝐭 𝐜𝐨𝐧𝐭𝐢𝐧𝐮𝐢𝐭𝐲 𝐢𝐬 𝐭𝐡𝐞 𝐩𝐨𝐢𝐧𝐭🫶. The w**es are still made in the same spirit: fully destemmed, a long cool maceration, 100% new oak for the Grands and Premiers Crus, nothing forced.

Nicolas now runs the vines; Guillaume, in the cellar since 2011, has the same quiet hand.
