佢喺Ay出世,第四代葡萄農,畢業於Lycee Viticole d’Avize,之後喺Henri Giraud酒莊擔任兩年發酵室經理。2021年接手家族酒莊後,大刀闊斧進行革新🙌。

佢將全部7.5公頃葡萄園轉型為有機認證生物動力耕作,涵蓋 Ay同Chouilly嘅特級園、Mareuil-sur-Ay同Dizy 嘅一級園,以及Marne Valley多塊優質地塊。佢每公頃種植超過100棵果樹,引入農林混合系統,自家調配植物浸劑,跟隨月相耕作,完全不用化學品,令葡萄園重拾豐沛生機。

🍾Two stunning champagnes have just arrived from one of the most exciting young growers in Champagne right now - Romain Henin.🤩

Born in Ay into a fourth-generation winegrowing family, Romain Henin trained at the Lycee Viticole d’Avize and spent two years (2011–2013) as vat room manager at the prestigious Henri Giraud estate. In 2021, he took over the family domaine, and led a viticultural revolution🙌.

He converted the full 7.5 hectares to certified biodynamic farming across top terroirs — Grands Crus Ay and Chouilly, Premiers Crus Mareuil-sur-Ay and Dizy, plus Marne Valley plots. Romain planted over 100 fruit trees per hectare, introduced agroforestry, uses homemade plant infusions while following the lunar calendar, and eliminated all synthetic chemicals to bring the vines and soils back to life.

In the cellar, his radical “0-0” approach💫 (native yeasts, gravity transfers, one year on lees in barrel, zero sulfites, no fining, no filtering, zero dosage) produces vibrant, energetic, mineral-driven Champagnes full of authenticity.

🥂Join us on Friday, 𝐌𝐚𝐲 𝟐𝟗 for a wine dinner at TABLE by Sandy Keung at H Queen’s, where beautifully prepared fresh seafood and seasonal ingredients meet the distinctive champagnes of 𝐆𝐚𝐬𝐩𝐚𝐫𝐝 𝐁𝐫𝐨𝐜𝐡𝐞𝐭.

Gaspard Brochet is one of the most exciting young winemakers from Montagne de Reims 🌟. Born in 1995, he grew up among the vines, worked in graphic design, returned home in 2013, and took over the family estate in 2017–2018. Today, he stewards a small 3.2-hectare domaine across Ecueil, Sacy, and Villers-aux-Noeuds, with some parcels dating back to the 1950s and ’60s 🌱. Though his father made wine under the Vincent Brochet label and his uncle is the respected Emmanuel Brochet 🤩, Gaspard has forged a strikingly personal path, unburdened by formal oenological training.

His winemaking is driven by intuition, experimentation, and respect for each site’s individuality❤️‍🔥. He picks at full maturity, gently presses in a traditional basket press, and lets the juice flow by gravity into a mix of barrels (many new) for spontaneous fermentation. Everything is done by feel: minimal sulfur, rare malolactic fermentation, and tailored stirring. Bottling follows the lunar calendar under cork with slow hand-riddling.

Gaspard’s wines stand out for their vivid sense of place, combining the freshness and finesse of northern Montagne de Reims with impressive length, texture and personality😍

𝐓𝐡𝐞 𝟑𝟑𝟑 𝐜𝐮𝐯𝐞𝐞 is Gaspard’s signature non-vintage Champagne. The number represents three key elements: the three classic varieties (Pinot Noir, Chardonnay, Meunier), the three villages, and a blend of three vintages. Each letter (333A to 333F) denotes a different assemblage or parcel emphasis. The two 333F cuvées are pure Pinot Noir from the same villages — one Blanc de Noirs, the other Rosé de Saignée.

With only ~8,000 bottles produced annually, Gaspard Brochet’s refined, expressive champagnes🍾 capture the quiet confidence of a talented grower redefining his corner of the Montagne de Reims.

Fourth-generation winemaker Clement Leclere took over his family’s 2.3-hectare estate in Coulommes-la-Montagne and surrounding Montagne de Reims villages in 2021. After training with legends like David Léclapart, Benoît Tarlant, and Julien Guillot, he returned with a clear vision: pure, terroir-driven Champagnes full of energy, precision, and personality.💛🍾

Clement farms with care — avoiding herbicides and insecticides, gently working soils with a small tracked tractor, and adopting organic practices while boosting biodiversity. He’s proud to be part of the Coulommes-Vrigny cooperative🙌, a modern micro-cooperative perfect for his small estate. It provides shared high-quality workspace with excellent equipment — including Coquard presses used by houses like Bollinger — letting him press plot-by-plot and keep full winemaking control.

In the cellar, he works with minimal intervention: indigenous yeasts, spontaneous fermentation, oak barrel aging, and extended time on fine lees, with no chaptalization, fining, or filtration — only minimal sulfur. The result is small-batch Champagnes of remarkable purity and character — the honest, vibrant grower Champagnes that make winelovers smile.🥂

喺Rotalier石灰石豐富嘅坡地,Labet家族低調redefine咗汝拉酒嘅可能性:精準、純淨、風土感爆棚。早在1970年代後期,Alain Labet已經開始單獨釀造同裝瓶個別地塊,遠早過「terroir transparency」成為潮流。更厲害係佢大膽用 ouillé(補滿酒液)方式處理Chardonnay同Savagnin,保留極致新鮮感同細膩層次💕。

Chateau de Beaucastel is one of the most respected names in Chateauneuf-du-Pape. Since the Perrin family acquired it in 1909, they have combined tradition with innovation. The estate pioneered organic viticulture in 1950 and biodynamic farming in 1974, practices that still ensure vine health and purity.

Situated on the northern edge of the appellation, Beaucastel benefits from cooling Mistral winds and classic Chateauneuf-du-Pape soils of rolled pebbles, clay, sand, and limestone. It grows all 13 permitted varieties, with a strong emphasis on Mourvèdre for depth, structure, and longevity. Old vines and meticulous management deliver wines of power, freshness, and finesse.

In the cellar, grapes are vinified separately then aged 12 months in large oak foudres. This creates the classic Beaucastel profile: layered dark fruit, savory spice, licorice, earth, and a firm backbone built for graceful aging.

背後嘅人係Enzo Pontoni🧑‍🌾,一個好低調謙虛、有超過40年經驗嘅酒農。佢嘅小酒窖喺Buttrio,位於意大利東北部Friuli Venezia Giulia心臟地帶。Enzo打理住大約20公頃古老嘅ponca土壤葡萄園——呢種泥灰岩同砂岩混合嘅土壤有六七千萬年歷史。呢度有山脈保護,又有亞得里亞海嘅微風吹拂,形成獨特氣候,令葡萄充滿活力同豐富個性。

每一塊葡萄園都用有機方式耕種,每個地塊分開釀造,只用天然酵母,干預極少。產量低到大約10 hl/ha。佢冇固定風格,每一年、每一塊地都跟住當年情況去做,只求最純淨、最忠實咁表現嗰片土地💓

Behind it all is Enzo Pontoni🧑‍🌾, a humble grower with 40+ years of experience. From his simple cellar in Buttrio, in the heart of Friuli Venezia Giulia in NE Italy, Enzo tends roughly 20 hectares of ancient ponca soils—layered marl and sandstone shaped 60–80 million years ago. Here, mountain shelter and Adriatic breezes create a unique climate that brings remarkable vibrancy and diversity to the land.

Every parcel is farmed organically and vinified separately using natural yeasts and minimal intervention, with extremely low yields of around 10 hl/ha. Decisions are made year by year and plot by plot, with no imposed style—only purity and a transparent reflection of each unique site💓

The result is a luminous range of single-vineyard expressions: vibrant Ribolla Gialla, textured Friulano, elegant Chardonnay, Sauvignon, Malvasia, Merlot, and Refosco. These are honest, site-specific wines—some of Friuli’s most storied labels. With total annual production usually ~8000 bottles, they remain exceptionally rare.

In the often-overlooked southern Cote de Beaune🇫🇷, where many rush past in search of famous names, 𝐃𝐨𝐦𝐚𝐢𝐧𝐞 𝐉𝐞𝐚𝐧-𝐌𝐚𝐫𝐜 𝐕𝐢𝐧𝐜𝐞𝐧𝐭 quietly crafts some of Burgundy’s most captivating wines. With remarkable purity, vibrant energy, and a true sense of place, 𝐭𝐡𝐞𝐬𝐞 𝐛𝐨𝐭𝐭𝐥𝐞𝐬 𝐭𝐮𝐫𝐧 𝐟𝐢𝐫𝐬𝐭 𝐬𝐢𝐩𝐬 𝐢𝐧𝐭𝐨 𝐥𝐚𝐬𝐭𝐢𝐧𝐠 𝐚𝐝𝐦𝐢𝐫𝐚𝐭𝐢𝐨𝐧🤫.

Founded in 1997 by Jean-Marc and Anne-Marie Vincent, the small family domaine began with vines inherited from Jean-Marc’s grandfather. Today it spans around six hectares, focused mainly on Santenay, with additional plots in Auxey-Duresses and Puligny-Montrachet.

Guided by his grandfather’s traditions and his father’s advice, Jean-Marc has farmed close to organic principles since 2003. Heavy tractors were replaced by lighter caterpillar-tracked equipment, and the domaine gradually adopted thoughtful innovations inspired by a close circle of fellow vignerons including Olivier Lamy and Bruno Lorenzon.🤩 High-density planting (up to 14,000–17,000 vines per hectare), braiding the shoots instead of hedging, and careful handwork in the canopy have resulted in wines of exceptional intensity and minerality—even from younger vines.

Harvest is manual with multiple passes for perfect ripeness, followed by gentle gravity handling in the cellar. Reds may see up to 100% whole clusters🍇 and age 15–17 months in about 20% new oak without racking. Whites receive a slow, low-pressure pressing and longer elevage on the lees in roughly 15% new oak. The wines develop at their own deliberate pace, revealing layered fruit, precise terroir character, and harmonious structure.

呢個位於Morey-Saint-Denis嘅家族酒莊,總面積僅四公頃,其中一半位於頂級Grand Cru地塊🌱,包括Clos de la Roche、Clos Saint-Denis、Charmes-Chambertin同Clos de Vougeot。約75%為自家果實釀造(Domaine Castagnier標籤),其餘為Jerome Castagnier negoce系列。

2023年,Jerome進行多次綠色採收以提升濃度,並且幾年嚟第一次將所有葡萄完全去梗。酒窖工作溫和細膩,包括小心管理酒帽及rack-and-return,增加口感深度而又避免過度萃取。發酵後,酒先喺缸中靜候,再於理想月相時刻轉入Francois Freres同Chassin橡木桶,陳年14至15個月,新橡木比例適中,並按各酒款度身調整🙌💕

This small 4-hectare family estate has half its vineyards in prestigious Grand Cru sites 🌱 including Clos de la Roche, Clos Saint-Denis, Charmes-Chambertin, and Clos de Vougeot. 75% is estate fruit bottled under Domaine Castagnier, the rest is negoce under Jerome Castagnier.

In 2023, Jerome performed multiple green harvests for better concentration. For the first time in several years, all grapes were destemmed. Gentle cellar work with careful cap management and rack-and-return built depth without over-extraction. The wines aged 14-15 months in Francois Freres and Chassin barrels, with new oak kept moderate and tailored to each cuvee🙌💕

Jerome describes 2023 as an vibrant and fruit-driven vintage. The wines are beautifully balanced — lively and fresh, beautifully balanced with excellent concentration and refined tannins, full of the estate’s signature charm and graceful aging potential.

Highlights include Chambolle-Musigny from 1921-planted vines in Aux Echanges; the energetic Clos de la Roche Grand Cru with chalky grip and long graphite finish; the reserved Clos Saint-Denis Grand Cru with delicate power and perfumed finish; and the Clos de Vougeot Grand Cru from a 0.5-ha parcel in Grand Maupertui, intense yet elegantly layered with satin tannins.
