I don't think a few cherries will make a difference in 6 tons of distilled plums, but who knows? We'll know in 6 years when the brandy is aged and ready!

Another day, another fruit collection.

Going full tilt at apricots at the moment. In a few days our destoner will pivot to plums.

For now the apricot fermentations are rocketing along and will be distilled as soon as they are done, making sure the spirit captures the freshed aromas.

Back to back bottlings this week... Gin, Ghost and Rum, plus a private client gin to boot.Not a good week to have a cold...

Back in 2020, when the distillery was pretty much mothballed during covid, I got together with my neighbour and we build a cooling pond for the distillery.

Addressing water use was something I'd always planned to get round to eventually, but a forced period of downtime allowed me to get moving with it.

This cool timelapse shows from when we broke ground to the point where we were about to add in the planting medium, plants, and full with water.

You can see the connections for the distillery on the right hand side.

It reduces water use by 85%.
