This week's Tuesday's Chow is a quick and spicy classic that's great for lunch or tea. These cheesy quesadillas are packed with oozing cheese and flavoured with our favourite Capsicana Feisty Hot Salsa. 🌶 😋 🇲🇽

To make 4 quesadillas, open a pack of 8 flour or corn tortillas and lay 4 of them on a board. Spread each with 1 tbsp of salsa, then sprinkle over a good handful of grated cheddar. Top each with another tortilla.

Place a griddle pan on the hob to heat up. Add 1 of the tortilla sandwiches to the pan. Cook until the bottom takes on some colour, then flip. You want it to be golden
brown and for the cheese to have melted, which will hold the 2 tortillas together.

Keep warm while you cook the remaining 3. Cut each into 4 or 6, pizza-style, and serve straight away. 😋 👏

This week's Tuesday's Chow is a simple noodle stir-fry. It's great for summer and makes brilliant use of these Blue Dragon noodles, which are nicely priced in our shops right now. 👏

We started by cooking the noodles, as per pack instructions. Then we drained them, cooled them under a cold tap, and tossed them in a little sesame oil to stop them sticking.

Next, we cut 2 carrots into batons, 1 red onion into wedges and 1 red pepper into chunks. We shredded ½ a savoy cabbage, then mixed together 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp sriracha sauce and the juice of ½ a lime in a jug.

We placed a wok on a high heat and added 1 tbsp vegetable oil. When it was hot, we tossed in the carrot, onion and pepper, and stir-fried for 2 minutes, then added the cabbage and cooked for 2 minutes more. Finally, we added the contents of the jug, along with the cooked noodles, and stir-fried for a final minute.

All that was left was to dish up in bowls, scatter over a few roasted peanuts, and serve with lime wedges. 😋 😎
