A twist on the New Orléans’ classic cocktail, our Spring Street Sazerac features all local ingredients: Rye Whiskey from Brunswick’s The Gospel Distillery, The Jezebel Absinthe from Head Heart & Tales Distilling Co and Mister Bitters Grapefruit and Agave Bitters.

There was once a character known in Sydney as ‘Burn em’ Down Dawn’ - we made a drink in her honour using Starward Distillery two-fold, Distillery Botanica lemon myrtle and toasted with Head Heart & Tales Distilling Co. absinthe. OBITUARY - A Martini with serious attitude.

I often wonder to myself when reading through cocktail specs "what were they thinking?" Usually, it's an expression of admiration at an inspired set of ingredients, but sometimes it's because I think the person that came up with them was genuinely mad. The Obituary is both! It's essentially a Martini with Absinthe, which is genius and also totally bonkers. Who thinks that the Martini is too light on booze? Seriously!? All that said, it's a damn tasty cocktail. If you get an Absinthe that louches intensely, like The Jezebel by Head Heart & Tales Distilling Co. you'll get this ghostly pale drink which I think looks absolutely stunning.

You should also notice the gorgeous Nick & Nora glass I'm using; another from the Riedel Bar Collection. I love the Nick & Nora glass because I do think it's the most elegant shape you can serve a cocktail in. It's small in capacity, ideal for low-volume high-alcohol drinks, and is the perfect replacement for the V-shaped cocktail glass. As iconic as it is, the V glass is an incredibly impractical design. You will almost always end up spilling your drink on your shoes with the V glass, but the Nick & Nora, with its tulip shape, solves that problem making sure you're not leaving the bar with gin-soaked socks. A win for everyone!

My delivery of Nick & Nora glasses came through from and I had to make a suitably elegant cocktail to fill them with.

The Gibson is essentially a Martini with little to no Vermouth garnished with a cocktail onion... Yep, that’s it. There’s really more to the drink than that, but you have to taste it in order to realise the fact. The Gibson is a lesson in minimalism; the smallest change to create the largest impact. That savoury, sweet astringent nose of the onion makes way for the decadent flavours of slightly seasoned gin. It’s not a normal Martini at all.

I know what you’re thinking “Hey, why the hell is your Gibson blue?” And the answer to this is Head Heart & Tales Distilling Co. The Jezebel Absinthe. High Proof Preacher posted a Gibson today too, and he added some celery bitters to his as a personal twist. I wanted to add a little extra something to mine, and remembered that The Jezebel Absinthe has seriously strong fennel notes, so I sprayed the inside of the glass with it. An interesting side effect is that it turned the drink a ghostly shade of blue. And damn is it pretty! Think I’ll be making all my Gibson’s this way.

What I love about Sazeracs, others than the fact they're delicious, is that they give you a lot of room for variation and creativity.

I was in the mood for a Sazerac with more earthy flavours, so I came up with this; the Backburner. The Rye is upped and the Angostura Bitters are replaced with Dale DeGroff Pimento Bitters. What makes the drink though is the Absinthe rinse and then the smoking of the glass, specifically in that order. The smoke clings to the Absinthe and you get this intense oily smokiness. I wasn't expecting it, but I like it!

So the The Patron Saint of Gin’s classic Death in the Afternoon is timely indeed!

Hemingway’s recipe simply calls for some absinthe, less being more to begin with, maybe a similar dash of simple syrup (but not for me) then topping the flute up with sparkling dry wine to release the mystical milkiness.

I’m not a fan of chocolate but I like other Easter flavours, so I found the the recipe on diffordsguide.com called Triomphe d’Anis, which combines some rich flavours for a boozy after-dinner cocktail that isn’t chocolate 🤗

Wash glass with The Jezebel absinthe from

Stir 45ml Hennessy cognac, 15ml , 15ml black coffee liqueur and 7.5ml of divine fino sherry, mine was in ice, and strain into your absinthe rinsed coupe.

Garnish with a dried star anise, or if you don’t have them 🙄 try some orange zest 😬🐰🍊😍♥️😇
