10 Years of De:Restaurant!

Thanks to all of those that came along to our very special Louis Roederer dinner last night, where we celebrated our 10th, Louis Roederer's 250th, and Cristal's 150th anniversaries.

We are hugely grateful to all who have supported our journey since we first opened the restaurant on 15th October 2016 and hope we've contributed to some memorable moments in our little corner of Cheshire.

DE:BOOKS CHAPTER 11 – TELL ME EVERYTHING
Tuesday 1st December | 7:00 – 9:30pm

For our last De:Books of 2026, we’ve chosen a book about what we hide from the people closest to us. For anyone that has read previous novels by Elisabeth Strout, we're reconnecting with Lucy Barton as she opens up to her estranged brother.

It’s about decades of secrets waiting to surface. Everything they've never said out loud. Strout makes it feel immediate and raw, like you're in the room listening.

On the night:

A guided discussion led by Howard, bringing insight and the occasional tangent
Carefully chosen w**es that warm you from the inside, introduced by Philippa
Big themes: family secrets, connection, estrangement, and what it means to truly know someone
The kind of evening that reminds you why you love books
We'll pause halfway for an interval with charcuterie and cheese boards (charged separately), so you can settle in properly.

🍾 GRAND TASTING 2026 - SUNDAY 15th NOVEMBER 🍷

It'll soon be that time of year again where we open up the doors on a Sunday afternoon and have over 100 bottles of w**e open to taste.

All the details can be found on our website where tickets can also be purchased. They can also be bought in store or over the phone. £50pp gets you tasting as many w**es as you like plus a £25 voucher to redeem against purchases of 6 bottles or more.

Additioanlly, we will be putting on a post-tasting 2-course supper for £30pp (contrary to Jon's email last week - sorry!!). Again, details and menu can be found on our website.

Celebrate 250 years of Louis Roederer Ch*****ne and 10 years of the De:Fine Restaurant with a black-tie dinner.

Excited to relaunch De:W**e School with the WSET Level 2 course kicking off in September. A wonderful, if slightly dangerous way to delve deeper into the glory of w**e. 'Lessons' take place at Define- not a bad classroom, with 40+ w**es taken from our shelves to help you see the light.

Places are very limited but all the information is on our website where you can book and pay for your spot/s. Who knows, we may even chuck in a voucher for w**e if you pass with distinction

We've moved on some of our springy dishes and Rich has knocked up some fresh summery numbers.
