Trout & Broad Bean anyone?

Many of you will know that Jon is a keen angler and he spends most of his days on the Rivers Wye and Derwent. However, it sounds like those waters are currently empty 🤔 (and not through the skills of JC)

Luckily, Cheffies have got their hands on some wild rainbow trout and are offering it up this weekend with broad beans and chorizo. Tables to be had for this evening and tomorrow all day so don't miss out and we'll see you soon.

Are you heading to Forest Live at Delamere this weekend?

We're opening up the kitchen a bit earlier on Friday evening if you fancy a little drink and a nibble before heading off to see Snow Patrol and friends. Tables are available to book from 5pm over the phone/in shop and from 5.30 onwards online.

Don't forget, we serve all day on Saturday so you can get started even earlier!!

We know you can't take glass bottles in with you but you can always buy some wine from us and decant it in to something else beforehand 😉

The Summer Menu in all it's glory ☀️

The De:Fine favourites have stuck around and the new seasonal dishes have come flying in (and are currently flying out, too!)

Our steaks from the board have been very popular these last few weeks so if you want to give us a call before you get here to secure the goods then that is absolutely fine! Alternatively, if you fancy a particular cut/size then give us a bit of notice and we'll do our utmost to get it in for you. Whole fillet of beef anyone??!

TOUR De:FRANCE EVENING
With Tom Fordyce
Tuesday 22nd July 7pm-9pm

Something a little different for you. An evening in the company of Tom Fordyce, the former BBC Chief Sports Writer, here to share his love and enthusiasm for the Tour de France. Tom’s a great guy, with a captivating combination of eloquence and insight with some extraordinary tales up his sleeve.

Tom left the BBC a few years ago to start up his own Podcast production business (he co-presented ‘That Peter Crouch podcast’ and ‘The Geraint Thomas Cycling Club’ among others), whilst ghost-writing autobiographies for sporting legends such as Ronnie O’Sullivan and Boris Becker. He spent many years indulging his passion for cycling reporting on the Tour de France, beginning with the coverage of Bradley Wiggins’ first tour victory back in 2012. In short, he knows a thing or two and is a wonderful raconteur.

As it happens, the evening we’ve planned for this coincides with the legendary Mont Ventoux ‘stage’ of the Tour. Which is quite remarkable as the evening will also include a glass of the white and red bottling of ‘Tom and the Peleton’, wines created to honour another Tom, Tommy Simpson, who tragically died in pursuit of victory on an ascent of Mont Ventoux back in 1967.

We’ll serve up a few French cheeses with the white, and a paté de campagne and saucisson, pique-nique style, with the red (Jon will no doubt chip in with a few words about all of this!).

I suspect this will appeal to the many cyclists amongst you out there. If so, we’d encourage you to come along in your favourite lycra- maybe even cycle to Define! If you’re not a cyclist, then an Abba outfit should do the trick!

To be honest, we nearly pulled the plug on 'DeBooks' due to patchy interest. Delighted we persisted, with a sell-out response to our last 'session' and with growing love for the format and the impassioned insights from Howard and Philippa.

Chapter 6 should prove equally popular, with the internationally acclaimed 'My Brilliant Friend' by Elena Ferrante.

FINAL WEEK OF SPRING MENU 💚 (+ some discount)

Next Wednesday sees the launch of De:Summer Menu 2025! Some lovely new seasonal dishes coming up ft. heirloom vegetables, sea bass and local Cheshire chickens.

The big staff tasting is happening this Saturday 31st May (the restaurant will be closed from 14:30-17:00 for this) and some teaser pics will be released.

If you want to get booked in and be the first ones to sample the summer delights, we'll do 15% off all food on Wednesday 4th and Thursday 5th June. Combine that with zero corkage on Wednesdays and you've got yourself a midweek date night!
