Offering a riotous night out for the well-heeled of Mayfair, you can find AmazĂłnico next door to Sexy Fish, boasting the fine address of Berkley Square. We caught up with their Bar Manager, Jefferson C., to hear all about the making of their new cocktail menu - a celebration of the rivers of the Amazon - launched in London and rolled out to all global sites earlier this year.

Q: How long have you been in London?

20 years! I planned on being here just two, but I fell in love with bartending. I was planning to go back to my banking job, which is what I did in Brazil. But then I kept staying, another year, another year, and now I have a family here.

Q: How did your career start?

My first job in bars was in the Southwark Tavern in London Bridge, collecting glasses, and then I got promoted to bartender and learned a few cocktails: Mojito, Bloody Mary, very basic. A friend suggested I join Hakkasan - I had to go back to being a barback again but I didn’t mind, because I got to learn so much. Hakkasan had one of the best bar teams for knowledge then.

I got promoted to bartender, then to head bartender. I was still immature as a person so it took me time to grow as a human being. I had great people behind me - George and Carole - I would say 90% of what I know comes from their support.

Q: How did you land at Amazonico?

Well I came here for a chat with Giannis (Apostolopoulos, Head of Bars) and we just clicked. And when we started to work on the menu together we were in sync: if I didn’t have the whole picture he would add things from his side until we had a whole drink.

Q: Tell us about the new menu here at Amazonico.

Well it was a long process! Finding glassware, getting approvals, costs, the whole thing. We wanted to move away from Tiki, being from Brazil I was like guys we are close, but it’s not the same!

We tried to bring the Amazon culture to the menu, using all sorts of amazing tropical fruits, like tamarillo, açai berries, bacuri.

We presented the new menu to the directors and were so nervous if they would like it, but they loved every drink. It was such a relief because these drinks, they truly reflect who you are.

The Whisky Exchange Trade offers our full range of Scotch and world whisky, rum, gin and tequila, including those exclusive to The Whisky Exchange, to the best bars, restaurants, hotels and specialist retailers in the country. We also supply our trade customers with Champagnes, vermouths, sherries and more, as well as exciting exclusive products and the largest selection of Old & Rare whiskies and spirits in the UK.

This is a new face, but the same heart. Our customers will still be looked after by the same dedicated, expert team that have always powered Speciality Drinks. We’ll still be running our market-leading education and community-building events and initiatives. But as we enter a new era of collaborative thinking, we want to have a new brand that embodies everything The Whisky Exchange stands for – referencing our history, and building on the passion of our staff, our suppliers and, above all, our customers.
