Project 1927 - Out Now!
Two years ago we approached six of Scotland’s best distilleries with an idea. Can you recreate a 1920s-style whisky, inspired by an old book we had found in British Library?
Honestly, we didn’t expect anyone to say yes. We’re still surprised that they agreed. But when you experience these spirits, you’ll see why we’re delighted that they did.
Each distillery had to shut down their normal production for between a week and a month to make this happen. This highlights the best thing about the whisky industry today - that it is full of passionate, like-minded individuals who are willing to collaborate & try something new out of a desire to create something special. Even if (and perhaps because!) that something is, the words of , ‘slightly mad’. We can’t thank them enough.
It turns out that almost everything about making 1920s-style whisky is genuinely hard. Using only heritage or local barley needs long advance planning. The yields from brewers yeast would make a contemporary distiller weep. There are no economies of scale. But the flavours are something else.
Project 1927 has challenged all of our assumptions about whisky.
Barley doesn’t have much impact? Try the thick, bready spirit produced by Ardnamurchan Distillery using 100% Chevallier barley vs. Holyrood Distillery spirit, where the same bready notes of Chevallier combine with fresh, juicy notes of Plumage Archer.
Yeast is irrelevant? Experience the impact of using spent brewer’s yeast in the herbal, menthol spirit from ‘An Unnamed Farm Distillery in the Heart of the Kingdom of Fife’ vs. the funky, mezcal-esque spirit Dornoch Distillery, inspired by the 1920s practice of aging yeast before distilling.
Floor malting and stills are secondary? Sip the viscous, mouth-coating spirit produced by winter floor malting Lochlea Distillery & the fresh, vibrant InchDairnie Distillery made by increasing the reflux during distillation.
These spirits are now aging in cask, left undisturbed for future years. If you want to experience the adventure from the start, this is your chance.
