A bottle made for the history books, not the dinner party.

Shane talks us through The English Wh**ky Co.'s Coronation of King Charles III single malt, released to mark the coronation in May 2023. Only 5,000 bottles were made, matured in bourbon and PX sherry casks and bottled at 46%.

It's a lovely dram on paper, but this one's a collector's piece. Shane's advice? Keep it sealed and keep it on the shelf. Some bottles are about the moment they mark, not the glass they end up in.

English wh**ky is now officially protected.

DEFRA has granted geographical indication (GI) status to ""English Wh**ky"" and ""English Wh***ey"". That puts it on the same footing as Scotch and its neighbours across the British Isles.

To carry the name, a wh**ky now has to:

→ Be made from UK grain and English water
→ Be distilled in England
→ Spend at least three years maturing in England, in wooden casks of no more than 700 litres
→ Be bottled at 40% ABV or above

There's still room to experiment, too. The rules allow modern still designs and casks made from wood other than oak.

With more than 70 distilleries in England now, this feels like a big moment for a category that's still young.

A distillery built around a single piece of kit. Literally.

When InchDairnie was being built in Fife, the mash filter went in before the walls and the roof. It's one of very few in Scotland, and it lets the team work with grains that would clog a traditional mash tun.

You can taste that freedom in the bottles. RyeLaw is their rye wh**ky, made from malted rye and malted barley and distilled for about two weeks a year. KinGlassie is the peated single malt, distilled for little more than a week each winter.

A few more things we love about the place:

→ The Lomond Hill still was built for them by Italian still maker Frilli and is named after the hills you can see from beside it
→ Fermentation runs for 60 hours in washbacks outdoors
→ Their casks hold 250 litres rather than the more usual 500
→ The single malt is distilled in every season of the year, and the first release is planned for 2029

Some wh**ky never made it to the bottling hall. It left the warehouse down a trouser leg.

Meet the copper dog: a slim copper tube on a chain, lowered through a cask's bu****le to draw out a sneaky dram. The story goes that it got its name because it never left its owner's side, just like a loyal pet.

It was risky business, as being caught could cost a worker their job. That's how the tales of quick hands and hidden tubes came about, though most of them are best enjoyed as folklore.

Today, copper dogs are collectors' pieces and conversation starters rather than working tools. The wh**ky they drew straight from the cask is still tasted the same way, though, at full cask strength.

Matured in two distinct casks, this one gets its rich, smooth character from spending time in both traditional oak and sherry cask before it ever reaches the bottle.
