Since we built the cooling pond in lockdown it has brought a huge amount of fauna into the grounds. For the last few years we've had a nesting pair of Grey Wagtails visit seasonally.

They are So Sweet.

This year they have nested in the eaves of an outbuilding and I managed to snap a photo of their young in between feeding rounds.

The pond was built to dramatically reduce our water use but it also highlights the benefit to the local environment of increased aquatic habitats.

Our PX Cask Gin won the aged category in awards 🤪🍸

It's the only spirit in my range I'd describe as imbalanced, but intentionally so as it's designed to kick ass in a powerful negroni (I'm a Antica guy for the negroni nerds).

As a long drink I take it as a dark n stormy in place of rum 😋 with ginger and lime.

Pick one up and give 'em a go.

I've tweaked my preferences over time for this and now wonder whether Fino Sherry is a better pairing.

Something new and unthinkable has happened... I ran out of a spirit!

Maybe it's the glorious weather that's thrown my planning off, but anyway, there'll be a four day hiatus in plum brandy while I get the next cask bottled. I did at least have the cask disgorged and blended down, but still...

Congratulations to everyone drinking it though, you have dragged me away from my Friday evening sundowner/s 🍹😢

Do we have a fancy ATEX pump to fill our casks? Er, no. We do it the old fashioned way using old father gravity. Yes it's very slow but on a day like today why not?!

Anyone worried about precision of fill volumes, don't worry, we've got that figured out 🧑‍🔬🔬

We've got a special guest this week...Claude is on holiday and patrolling the courtyard while her folks are away.

She's from a household of writers and I think she's a bit bemused that people move around so much.

Out of winter hibernation, and this baby is about to work nonstop to crack through all the apple cider which has been fermenting slowly over winter, to make our new make apple spirit.

There are a couple of changes to our spirit lineup coming this year so watch this space...

A very Happy Christmas and a God Yul to all our supporters. Thank you to everyone who has bought a bottle or drunk a cocktail containing my spirits this year, every little helps these days! It's so wonderful to see everyone sharing special moments with a glass of my booze in their hands.

To everyone who has received a gin experience voucher for a Christmas present I'll look forward to seeing you very soon for a wonderful day of booze making.

Flashback to 2015 when the local farmers lad did some precision work with the telehandler to get the still constructed in place.

Next year will be our 10 year anniversary! Should we have a quiet night in or a big party for all our biggest supporters?

A lovely afternoon chatting to customers at . The new spirits shop next to the wine shop on Pall Mall should be a mecca for spirits fans with their superbly curated selection of bottles from around the world.
