🍷 In The Know

2022 Muscadet Sèvre et Maine Sur Lie Cru ‘Clisson’ – Domaine de la Bretonnière, Loire Valley, France

What a half term it’s been — sunshine, outdoor living, al fresco dining and temperatures more reminiscent of the Mediterranean! With the weekend now in sight, George’s choice is all about rewarding yourself after a glorious week in the sunshine.

And yes, water first in this heatwave… but if a chilled bottle is being opened later, this is exactly the sort of wine you’ll want in the fridge.

Muscadet is often underestimated, yet wines like this beautifully demonstrate just how refined and satisfying the Loire’s best examples can be. This Cru Clisson from Domaine de la Bretonnière is crisp, mineral and quietly complex — tailor-made for warm evenings, seafood suppers and relaxed outdoor dining.

Produced from old Melon de Bourgogne vines grown on Clisson’s granite-rich soils, the wine combines freshness with remarkable texture and depth thanks to extended ageing on its lees.

✨ Tasting Notes
Pale and luminous in the glass, with aromas of green melon, white peach and delicate floral notes layered with hints of fresh bread and subtle creaminess. The palate is textured yet vibrant, balancing richness with bright acidity and a long, mineral finish that keeps everything wonderfully refreshing.

🌿 About the Producer
Led by Bertrand Cormerais, Domaine de la Bretonnière has earned a reputation for expressive, terroir-driven Muscadet. This Cru Clisson spends more than 40 months ageing on its lees, creating impressive complexity and mouthfeel while preserving purity and freshness.

🍽️ Seasonal Food Pairings
Perfect with oysters, grilled prawns, crab, sea bass or seafood in delicate sauces. It’s also superb with goat’s cheese, summer salads and lighter dishes enjoyed outdoors as the evenings stay warm well into the night.

If Chablis is your usual summer white, this could be your next warm-weather discovery — elegant, mineral and effortlessly cooling in the sunshine.

🌊🍷 NEW ARRIVAL FROM CHILE’S COOL-CLIMATE COAST

2023 Chardonnay Gran Reserva – Las Niñas | Leyda Valley, Chile
From just £15.12 a bottle in a case deal

If you think New World Chardonnay is all about heavy oak and tropical fruit bombs, this beautifully poised wine from Chile’s Leyda Valley may well change your mind. Elegant, mineral and wonderfully balanced, this is a Chardonnay with real finesse — and one we suspect will quickly develop a loyal following.

🍇 About the Wine
Part of the Las Niñas Terroir Collection, this Chardonnay comes from the cool-climate Leyda Valley, close to the Pacific Ocean in Chile’s San Antonio region. Here, cold coastal breezes and morning fog slow ripening, helping the grapes retain freshness and precision while still developing generous fruit character.

The result is a style of Chardonnay that beautifully bridges Old World elegance and New World generosity.

👃 Tasting Notes

🍑 Apricot & ripe peach
🍋 Grapefruit & citrus lift
🥖 Toasted bread & gentle nuttiness
🧈 Creamy texture balanced by vibrant acidity

Pale gold in the glass, the palate is layered and refined, with carefully judged oak adding subtle richness without overwhelming the fruit. Lees ageing brings texture and complexity, while a faint mineral edge keeps everything fresh and focused through to a long, poised finish.

🏡 Winemaking
Fermented at cool temperatures to preserve aromatic clarity, with part of the wine fermented and aged in first-use French oak barrels for around 12 months. Regular lees stirring enhances texture and depth while maintaining balance and freshness.

🍽️ Perfect With
• Grilled seafood & scallops
• Roast chicken with herbs
• Creamy mushroom dishes
• Buttery sauces & richer fish dishes

💡 Why You’ll Love It
This is the sort of Chardonnay that converts sceptics — rich enough to satisfy lovers of classic oaked Chardonnay, yet fresh and mineral enough to keep you reaching for another glass.

👉 A brilliant dinner party white and one to have ready in the fridge when friends arrive unexpectedly.

🍷 In My Glass

Fine White Port – Graham’s, Douro Valley, Portugal

We’re in the middle of a Spring heatwave… so naturally, it’s time to pass the Port! But perhaps not in the way you might expect.

Forget heavy, fireside drinking traditions for a moment — chilled White Port and tonic (Porto Tónico) is one of summer’s great underrated aperitifs. Think of it as Portugal’s wonderfully refreshing alternative to a G&T: lighter, aromatic, citrusy and dangerously easy to drink in the sunshine.

This Fine White Port from Graham’s is made primarily from Malvasia Fina and showcases a fresher, crisper side of Port that deserves far more attention. Served over ice with tonic water, a slice of lemon and perhaps a sprig of mint, it’s exactly what I’ll be reaching for as the temperatures continue to climb.

✨ Tasting Notes
Pale golden in colour, with bright aromas of stone fruit, citrus peel and delicate floral notes. The palate is fresh and lightly sweet, balancing orchard fruit flavours with crisp acidity and subtle nutty complexity. Refreshing, smooth and beautifully versatile.

🌞 About the Style
White Port is made from native Portuguese white grape varieties grown in the Douro Valley and fortified in the same way as traditional red Port. Often drier and lighter in style, it has become increasingly popular with bartenders and wine lovers looking for something refreshing and a little different for warmer weather.

🍽️ Perfect Summer Pairings
Ideal as an aperitif alongside salted almonds, olives, charcuterie or pâté. It also works beautifully with grilled prawns, seafood dishes and light Mediterranean nibbles enjoyed outdoors in the evening sun.

To make the perfect Porto Tónico: plenty of ice, one part chilled White Port, two parts tonic water and a generous slice of lemon.

Summer in a glass.

Half term, a heatwave and a long drive to Devon can only mean one thing… low-effort, high-reward cooking. ☀️🚗

I’m down in Devon this week visiting family, and while we always share the cooking, there’s absolutely no chance I’ll be spending hours in a hot kitchen in this weather.

🦐 prawns and shellfish
🐟 grilled fish
🍆 Mediterranean vegetables
🍝 seafood pasta
🍋 anything involving olive oil, herbs and sunshine

Happy Bank Holiday and Happy National Wine Day!

This year, we are inviting you to explore wine in a different light.

A kaleidoscope of colour, texture, aroma and character, wine is constantly evolving — shaped by grape, place, season and time. Few styles capture that spirit more beautifully than orange wine.

Our featured bottle for National Wine Day is the remarkable 2025 Petit Sauvage Orange from Pierre & Antonin in the Languedoc — a naturally expressive orange wine made from Souvignier Gris, with white grapes fermented on their skins for 11 days and no additives.

Floral and textured, it opens with notes of jasmine, white tea, bergamot and vine peach before unfolding into layers of gentle tannin, silky structure and Mediterranean warmth.

Thoughtfully made for sharing, conversation and the table.

Best enjoyed lightly chilled alongside roasted chicken, creamy vegetable dishes, soft cheeses or lightly spiced Mediterranean flavours.

A Kaleidoscope of Taste.

🥃🌴 NEW ARRIVAL — A VERY SPECIAL RUM FROM RÉUNION ISLAND

Back when Mark regularly commuted between Toulouse and London, there was always one flight boarding at the same time that sparked a daydream… Réunion Island. While heading towards grey skies and spreadsheets, there was always the temptation to wander onto the wrong plane — bound for volcanic landscapes, tropical warmth and rum like this instead. ✈️🌋

And now, finally, a little taste of Réunion has arrived at Baythorne.

Introducing the exceptional Isautier Alfred 12 Year Old Rhum Vieux — a beautifully mature sipping rum that feels tailor-made for slow evenings, thoughtful gifting and after-dinner indulgence.

Crafted on the volcanic island of Réunion in the Indian Ocean, Isautier has been producing rum since 1845, making it one of the oldest distilleries in the French overseas territories. Réunion’s tropical climate plays a huge role in the rum’s character — the warm conditions accelerate ageing, allowing the spirit to develop extraordinary depth and complexity far faster than in cooler climates.

🥃 About the Rum
Named after Alfred Isautier, the visionary behind the distillery’s iconic triangular bottle, this traditional molasses-based rum was distilled in column stills before ageing for 12 years in French oak ex-Cognac barrels under tropical conditions on the island itself.

The result is a rum of remarkable elegance, richness and freshness.

👃 Tasting Notes

🌴 Exotic fruit & candied citrus
🪵 Sandalwood & precious woods
🍫 Cocoa, roasted nuts & dark chocolate
🌿 A subtle minty lift on the palate

Silky, layered and beautifully long on the finish, it evolves wonderfully in the glass — revealing dried fruits, spice and gentle oak with every sip.

If you’re looking for something genuinely distinctive this summer — a bottle with story, provenance and real craftsmanship — this may well be the one.

Very limited availability in store now.
