In 1979, Charles achieved what many thought impossible: he persuaded the British Admiralty to share their secret, centuries-old rum blending recipe. He resurrected the legendary navy spirit following the end of the daily rum ration on 'Black Tot Day', while generously donating royalties back to Royal Navy charities for the rest of his life.

Almost half a century on, this extraordinary release recreates the spirit of that very first 1979 blend:

✨ A marriage of rums aged up to 10 years from Guyana (Demerara Distillers), Trinidad (including historic Caroni stock), and the British Virgin Islands (Callwood Distillery).

Expect notes of candied orange peel, dried apricot, blossom honey and ripe peach, all lifted by bright, mouthwatering acidity. It has the honeyed decadence of its famous neighbours across the river in Sauternes and Barsac, yet stays wonderfully fresh and silky rather than heavy.

Perfect with blue cheese, chicken liver pâté, lemon tart or tarte Tatin – or simply on its own as dessert.

Schieferkopf Riesling Lieu-Dit Berg 2021 is a single-vineyard Alsace white w**e from Bernardvillé, made by Michel Chapoutier on ancient blue schist. It is one of three "Lieu-Dit" w**es from this vineyard.

In a recent panel tasting in The W**e Merchant, the three Schieferkopf Lieu-Dit Rieslings came 1st, 3rd and 5th. Berg took 3rd, which rather confirms what we thought when we tasted it.

Berg is the highest of the three Lieu-Dit parcels, so the fruit stays bright and the w**e keeps a proper mineral spine. Hand-picked, native yeast, 15 months in large foudres and, unusually for Alsace Riesling, full malolactic fermentation. That is what sets it apart: still citrus, green apple and stone, but with a softer, creamier texture than the steely style most people expect.

£29.95 a bottle.

Lovely with grilled sea bass, scallops, tarte flambée, or a lightly spiced supper. It will also age, if you can resist opening it.

Akashi-Tai Sake Tasting at Lysses House Hotel Review - A great evening!

Last night's Akashi-Tai Sake Tasting was a real success. A well-attended room at Lysses House Hotel filled with curious drinkers, from committed sake fans to
people trying it for the first time.

Much of the credit goes to our host, Akashi-Tai's Global Brand Ambassador Miho Komatsu. She was warm, knowledgeable and generous with her expertise, guiding the room through the Akashi Sake Brewery's story and the differences between each style. Her explanations of polishing ratios, rice varieties and brewing methods made a sometimes daunting subject easy to follow, and the questions kept coming all evening (she has promised to return for a tasting of Hatozaki Wh**ky and 135 East Gin!).

The most expensive sake on the table was also the biggest seller of the night. The Akashi-Tai Junmai Daiginjo Genshu Yamadanishiki Sake is the top of the range, and it won over the room. The two next most popular were the "liqueur sakes", the plum-infused Akashi-Tai Shiraume Ginjo Umeshu and the Yuzu-flavoured Akashi-Tai Ginjo Yuzushu. The Umeshu has a lovely, natural sweetness and can be used in place of a dessert w**e (try it with mince pies), whilst one of the cocktail enthusiasts attending said he would use the yuzushu in place of lemon juice in cocktails.
