🥃 Longrow Peated Single Malt Scotch
We recommend this whisky for its peaty style, mingling with the delicate balance of smoky and earthy flavours found in Smoked Gubbeen.
The marriage of rich vanilla and coastal peat found in the whisky enhance the smoky notes of this cheese, creating an intense savoury experience.
Nose: Very creamy, vanilla custard. The smoke develops and toasted marshmallows, herbs and rich fruits appear over time.
Palate: Incredibly well balanced — rich and creamy with a slight medicinal hint. The smoke is always present and washes over the palate in waves.
Finish: The gentle smoke lingers and lingers.

🧀Smoked Gubbeen🧀
Worked by the Ferguson family for generations in Schull, West Cork, Gubbeen Farm is bordered by the wild Atlantic ocean and Mount Gabriel — the latter sheltering the pastures that support the Gubbeen herd.
The natural Gubbeen is gently smoked using the ‘Pinney’ system, wafting smoke gently over the cheeses for an extended period of time. The end result is a wonderful cheese with a delicate balance of smoky and earthy flavours. This gentle handling retains the original character, with notes of butter, mushrooms and a slightly sweet finish, enhanced by the gentle oak smoke.
Pairs with tart fruits, apples, white grapes or Quince. Try adding Smoked Gubbeen to your evening meal to give a bit of depth to your cheese-based dishes.
