Yet another cycle of distilling completed, yet another yearly ritual, a bunch of gestures, transmitted years to years, passed on from people to people.
Little has changed since the building of our first two original stills in the late 1960’s which we continue to operate and monitor manually, to carefully adjust every hour, the cuts are performed manually or rather “au nez” so that distilling remains a sensory process that has to be mastered over time and most of all, experienced.
And yet, every season seems different to one another and brings its new share of challenges and uncertainties, and 2024 has not fallen short in that perspective. In the face of a degraded context and many challenges, let’s still appreciate the making of a new millesime of eau-de-vie and celebrate the perpetuation of rituals. 🥃
