We talked about oak last week and the various forms. We didn't really talk about when we add them to the wine. Some, like chips and dust, are added before fermenting. Oak cubes are generally added after the fermentation process, during aging. This helps control the extraction process to protect the final taste of the wine.

This is definitely not the first time we've talked about adding oak to wine. Today we will focus on the difference between a medium toast and a heavy toast. No matter where the oak is sourced from (USA or France), the same principles apply. Heavy toasted oak will add more coffee, chocolate, or even "burnt" aromas. Medium toast, on the other hand, provide mellow aromas like vanilla, dulce de leche, allspice, or even toasted bread. Both varieties may be used in the same wine to create different sensations. Which combination is best is an entirely personal preference. Just remember it's easy to add more oak later, but it can't be removed if there is too much.

However, we know that there are those who sniff a glass of wine and think "smells like wine". Welcome to April! This is coming to you late because it has been challenging for us to write.
It is said, "All good things must come to an end" and so it is. After 3 1/2 years of ownership, we regret to announce that Wine O'Willie's will be closing at the end of May.

We placed our final order with Winexpert yesterday. This means that all outstanding orders that have been paid for will be fulfilled.

If you reserved wines, arrangements are being made with colleagues to be able to fulfill those requests. We will be in direct contact with those affected as soon as arrangements are finalized.

If you have wine waiting to be bottled, please call the store to make an appointment as soon as possible.

There are still a few of the Island, Niagara, and Twisted Mist kits available in the store, so if you would like one made, come see us sooner rather than later.

We will miss all of our customers and our regular visits with you. We are truly sorry for this inconvenience. We have some colleagues who have been supportive of us, and would like to direct you to them if you wish to continue your wine-making journey:
