Welcome to Whisky Drop’s Dram Dictionary, where we’re decoding the world of whisk(e)y, one random word at a time.

Today’s word:

Treacle (n): that thick, dark syrup that is mostly sweet but sometimes a little bitter — think British molasses.

Treacle is an uncrystallised syrup made when refining sugar (we won’t get into the chemistry of it all). It varies in colour and thickness, with black treacle most closely resembling molasses (although they are different).

In whisky terminology, treacle is one of those tasting descriptors that whisky enthusiasts love to throw around (for good reason): it describes those sweetish syrupy notes that pop up in your glass but aren’t quite sugar and aren’t quite pure maple syrup.

When you encounter “notes of treacle” in your dram, you’re tasting something sweeter than what’s found in your average whisky but with more richness and complexity than straightforward sugar or maple syrup.

Treacle notes have a stickiness to them and tend to linger on your palate. They’re also often accompanied by subtle hints of burnt sugar or even a touch of bitterness that keeps things interesting.

You’ll find treacle commonly mentioned alongside other sweet descriptors, such as toffee, caramel, and the oh-so-British dessert, sticky toffee pudding. However, treacle brings a darker, more robust quality to the table.

For whisky drinkers looking to expand their tasting vocabulary, treacle is specific enough to be useful but accessible enough that most people can identify it once they know what they’re looking for.
