Some things are too good to let go.
The Noyce Brothers cellar door may have closed its chapter, but the wines haven't gone anywhere, and this Prosecco is exactly why.

Made in the Hunter, this is a local sparkling that actually earns the occasion. Light, fresh, 11.5% and finished with that satisfying cork-and-bail top that means business. Perfect occasion, the long weekend!

Two beers. One very good reason to stop in.
Sydney Brewery has been doing things right for a while now, and these two are proof.
If you're after something clean and classic, their Munich-style Lager is exactly that - subtle hops, refined malt, multi award-winning and made for a slow afternoon. $7 a can.

If you want something with a bit more swagger, the East Coast IPA brings citrus, tropical fruit and pine in a 7% pour that somehow still manages to go down easy. Six hops. Wave reviews. $7 a can.

Verdelho has been growing in the Hunter Valley since the early 1800s. Unruly Wines grows it on a single vineyard in Broke Fordwich - and the 2024 'High Ground' is exactly what that sounds like.

Bright, aromatic, crisp. Natural acidity lifting citrus and tropical fruit into something clean and quietly addictive. Made to drink now, but will also hold for 10+ years if you have the patience. Most people don't, and that's fine. We stay, enjoy it right now!

Pair it with grilled seafood, a long lunch, or nothing at all. This is the bottle you open before you decide what to cook.

Unruly Wines is a small-batch, single-vineyard producer making wines that taste exactly like where they come from. A specific piece of land in one of Australia's most underrated wine regions.

Phoenix Distilling Co. had a big night at the inaugural Fever-Tree Gin & Tonic Cup 2026, and their Scarlet Nights Sweet Tea Infused Gin came home with 5th place across Australia and New Zealand. Well done, Phoenix!

Delicate, fruity, perfectly balanced. If you want to make it properly, 40ml Scarlet Nights, 120ml Fever-Tree Wild Raspberry Tonic, a generous sprig of fresh mint, and a skewer of blueberries and raspberries. Gin first, then tonic, load with ice, stir gently. Done.

And if you missed our post about their Island Daydream, that one placed 3rd. Two Phoenix gins, two Fever-Tree awards, both now stocked at SIP Wollombi Village.

Phoenix Distilling Co. just placed 3rd at the inaugural Fever-Tree Gin & Tonic Cup 2026. One of Australia and New Zealand's most prestigious gin awards… and their Island Daydream Sweet Tea Infused Gin is now stocked right here at SIP Wollombi Village.

Crafted in the Hunter Valley. Delicate, floral and perfectly balanced. The kind of gin that earns its awards quietly and then surprises you in the glass.

If you want to make it properly, 50ml Island Daydream, 120ml Fever-Tree Elderflower Tonic, one full length cucumber peel, and two sprigs of thyme. Gin first, then tonic, load with ice. That's it.

Two winemakers who genuinely love what they do. You can taste it.

Ian and Suzanne Little established The Little Wine Company in the Broke Fordwich region of the Hunter Valley, and have spent over two decades pioneering varieties that most people hadn't heard of - Tempranillo, Vermentino, Barbera, Albarino and more.

Their 2021 Tempranillo is in at SIP right now. Vibrant red fruit, elegant, early drinking. The kind of bottle that disappears faster than expected.

If apple pie had a moonshine heritage, it would taste exactly like this.

Old Duke's Apple Pie Moonshine has just landed at SIP Wollombi Village, and it's a good one for the cooler months. Rich and smooth with sweet apple, cinnamon and nutmeg, and a warm finish that lingers just long enough.

Drink it chilled on its own, mix it with cola or ginger beer, splash it into a whiskey, or, honestly or use it in your next bake. It works!

Italian and Spanish varieties. Grown in Pokolbin. That's the Anomaly.
Peter Drayton's 2025 Anomaly Pinot Grigio - pale straw, delicate aromas of nashi pear and fresh citrus, crisp clean finish. Easy drinking but with a bit of a story... Sangiovese, Vermentino, Fiano, Graciano, grown right here in the Hunter.
