Our Story
Moving to the Darling Downs over 10 years ago, the Ellison Family have a long history in grazing cattle and dairy farming, both here on the Downs and in Western Queensland. At any given time there are 3 generations of our family working or just hanging out on our farm situated south west of Toowoomba. There is always something to do, animals to be fed, fences to be fixed. Life is busy.
Since moving to the region our family have purchased two butcher shops, one in 2013 and another in 2015 where our son Terrence, as Operations Manager, saw an ever increasing demand from customers to buy locally sourced, chemical free, pasture fed meat. Last year the decision was made to find a dedicated premises to grow and expand our business and re-brand into a larger more convenient retail space and Drive Thru. That was the beginning of “The Paddock”.
Since finding our new premises (situated in the old Delacy's Hotel site at 224 Ruthven St) we have worked tirelessly to bring the “The Paddock” to life. In just a few short weeks the doors will open to what we believe will be a unique shopping experience for local families and foodies alike, and we could not be prouder!
Chemical free, ethically raised and pasture fed beef, pork, lamb and chicken will be available in one of Toowoomba’s largest meat & produce showrooms. In collaboration with other local farmers, we will also be selling fresh locally grown fruit and veggies from The Paddock as well as local eggs, milk, bread and cheese. We are committed to supporting local farmers for generations to come.
