Domaine Guilbert-Gillet is one of the exciting young names emerging from Savigny-lès-Beaune, founded in 2020 by Benjamin Guilbert and his wife Caroline, with René Gillet as a partner. Benjamin has an impressive background, having trained in oenology before gaining experience at estates including Domaine de Montille, Zind-Humbrecht, Trimbach, Liger-Belair and Clos de Lambrays. The domaine is tiny, at just 3.6 hectares, farming organically and focusing heavily on meticulous vineyard work and parcel expression. The wines are made in a decidedly traditional style, with reds fully destemmed, long macerations and gentle pressing, followed by around 18 months in barrel without racking. Their range includes Bourgogne Les Perrières, Savigny-lès-Beaune, Savigny 1er Cru Les Peuillets and Les Rouvrettes, Les Échalas, Les Planchots du Nord, as well as Chorey-lès-Beaune and a small number of more ambitious wines. Despite being only a few vintages old, Guilbert-Gillet has quickly developed a reputation as one of the new domaines to watch in Burgundy, with the wines prized for their precision, purity and detailed expression of Savigny’s terroirs.
