Most chilli vodkas are a flavouring exercise. Summum isn't.

The distillery sits on the banks of the Charente in Cognac, where two centuries of eau-de-vie know-how go into a wheat vodka named for the summit, the very best. For the Chilli expression, real Espelette pepper, the prized Basque chilli, is macerated straight into the spirit. No shortcuts, no spice rack.

The payoff: a Bloody Mary that needs nothing more than tomato juice over ice. Round, savoury and properly spicy, it earns its place at the grill too.

Some of the great grapes of Armagnac nearly disappeared. Tariquet brought them back.⁠

Armagnac has been produced at Domaine Tariquet, in the village of Eauze in Gascony, since 1683. The Grassa family took ownership in 1912 and, now five generations on, runs one of the most complete single-estate Bas-Armagnac ranges in France.⁠

F***e Blanche, the appellation's most aromatic grape, all but vanished after phylloxera. They reintroduced it in the 1980s. Plant de Graisse, another near-extinct heritage variety, was replanted in 2001.⁠

Bright, lifted, distinctly Gascon. Worth seeking out.⁠

Long before Yamazaki, there was Eigashima.

Granted Japan's very first whisky-distilling licence in 1919, the White Oak Distillery in Akashi has been quietly doing things its own way ever since. Their copper pot stills run for only a few months each year, producing small batches with a high degree of artisanal control.

The result is Tokinoka, meaning "the fragrance of time". A pair of beautifully balanced blended whiskies that have flown under the radar of the bigger Japanese names for decades.

Worth getting to know.
