Long before Yamazaki, there was Eigashima.

Granted Japan's very first whisky-distilling licence in 1919, the White Oak Distillery in Akashi has been quietly doing things its own way ever since. Their copper pot stills run for only a few months each year, producing small batches with a high degree of artisanal control.

The result is Tokinoka, meaning "the fragrance of time". A pair of beautifully balanced blended whiskies that have flown under the radar of the bigger Japanese names for decades.

Three days of planning, reflecting, and bringing the whole team together, followed by a winery day on the Mornington Peninsula.
