What is dip hopping? I'm glad you asked. :)
The technique for enhancing pleasant hop flavour and aroma, while minimising some of the harsher characteristics, was developed in Japan, and has spread to the rest of the world.
Older methods of hopping beer involved adding hops at the boil stage, and sometimes right at the end of the boil. Modern brewing methods added Dry Hopping and even Double Dry Hopping to pack more flavour and aroma punch into craft beers. Dry Hopping means adding hops part-way through the fermentation process, often more than once (hence the 'double').
Dip hopping gets right in the middle of that whole process; after the wort partially cools down, but before fermentation. The dip hops are then removed before beginning the fermentation process, which can otherwise create some less desirable hop flavours.
