Special Event! ~ Mother’s Day Brunch.

Treat your mum, mum figure, friend or lover to brunch this Sunday.

The menu is short and sweet (and savoury!) and we’ll have coffee from friends and Northbridge neighbours .

Bookings pretty much essential, with a few very limited spots for walk-ins. Our last brunch booked out in a few hours, so - you know what to do.

She comes to us from Simon Martin’s mana - a fixture of modern British dining in Manchester - where she became Europe’s youngest ever manager of a Michelin-starred restaurant.

Our resident musical talent, Alex joined us in August last year after moving here from the US. He’s got 10 years’ experience working in old world New York dining (we’re talking table-side meat carving in the Flatiron District), and more recently ran a farm to table restaurant in South Carolina.

Alex has a voice of smooth and soothing tones and brings an understated pleasantness to service.

CELLAR DIVE! Five vintages of De Moor ~ Chablis, Burgundy.

Alice and Olivier de Moor are absolute icons of Chablis.

Well known for their pure expressions, crafted from small plots in Chablis, Chitry and the little known Saint Bris appellation, the De Moor wines are highly sought-after all over the world – and increasingly difficult to get your hands on.

We’ve pulled these from the cellar – five vintages of Bourgogne Chitry (2018–22) and four of Bourgogne Aligoté (2019–22).

Yesterday was our last service with these two wonderful people, Amber and Sam.

We know you’ve all grown to love seeing them, being greeted by their warm smiles and genuine curiosity, and listening to them passionately share the beautiful stories behind our many bottles of wine. Like you, we’re going to miss them dearly.

We’ll be welcoming a few new faces in the coming weeks and also re-introducing you to a few existing faces you’ll be seeing more of. Stay tuned!

For now, we’re taking a short break. We will be closed this week, reopening for service on Thursday, Jan 30.

PRODUCER SPOTLIGHT: Iseya Distillery, Kanagawa, Japan. .iseya

This amazing range of amaros and bitters is made by Tatsuya Motonaga, who founded Iseya Distillery in Lake Sagami, Kanagawa, in 2021.

The distillery is housed in a repurposed, traditional 100-year-old house, where each batch of Scarlet is handmade and hand bottled from majority local ingredients, including Motonaga’s own botanicals.

Before Iseya, Motonaga’s career was spent working in some of the world’s greatest cocktail bars: Shibuya’s Coal Ila, Shinjuku’s BenFiddich and Taipei’s Wa-shu just to name a few. Here, he grew a desire to create a unique Japanese amaro brand, and started this journey by making a trip across Europe and the UK, visiting more than 70 distilleries.

He became enamoured with the nuance and beauty of the time-honoured craftsmanship and local agricultural practices that give us some of the world’s greatest beverages.

His Scarlet range embodies this essence. Every process is done without machines, from filtering and bottling, to labelling and sealing. They are rich with the incredible character and herbaceousness of their raw ingredients, making for the most satisfying of sips after a meal.

Be sure to ask us about Scarlet next time you’re in for dinner; no meal is complete without a short glass of one of these inspiring drinks!

Have you met Chef Mimi? 🔪

Originally from France, Mimi (aka Emeline Heems) joins us after six years working in bistronimic restaurants both at home and in Switzerland. At only 26 years old, Mimi has earned a reputation for her creativity and precise technique. She brings so much heart, consistency, fresh ideation, and so many laughs to our days at Wines.

She’s on a world tour and here for a good time, not a long time — so be sure to pop your head in the kitchen and say bonjour in the next month or so while we’re still lucky to have her!
