NEXT CHEF IN RESIDENCE: Vince Conjaerts ~ 2 – 13 October ~

It’s a spring miracle! Chef Vince Conjaerts is coming to the Wines of While kitchen for two weeks only, marking his first time cooking in Perth since 2019.

We’ve been following Vince since his time at Darryl Naidu’s pioneering Subiaco restaurant New Normal, where he solidified the no-waste cooking practice that has permeated his whole career. After their closure, Vince took his talents down south where he worked for five years first as sous (with former Wines of While resident ) and then as head chef at Bunkers Beach House. There, he ran a sea food only set menu focusing on whole fish preparations, working creatively to directly source the freshest catch and use every single part of the animal.

Originally from Belgium, Vince’s interest in whole fish goes back to his time at famous Antwerp butcher , which introduced him to charcuterie and dry-ageing. Before that, he had spent nine years at the charming, old-world De Kleine Zavel and three formative years at produce-focused L’épicerie du Cirque, which shaped most of his cooking.

Before coming to Australia in 2015, he also started doing pop-up restaurants in Belgian living rooms, which spurred a love of foraging and a stronger interest in sourcing produce and how it’s grown. Living and working in WA’s south west – including for roaming dining project for his first two years here – has only fuelled that fire, along with a continued practice of making preserves and sourdough.

SPECIAL EVENT: Eat the Kingdom ft. ~ Thursday 7 August

Next Thursday night we are excited to host the one and only Martin Martini for a special pop-up featuring a lot of very cool and delicious wild mushrooms! 🍄‍🟫

Martin is a mushroom hunter visiting from the Northern Rivers (NSW), and he’s bringing some of his favourite mushrooms to share — think chanterelles and parasols, woodears and porcini, honey and hedgehogs. Not stuff you get to enjoy everyday, that’s for sure.

We’ll be featuring a number of different mushroom dishes on our seasonal à la carte menu, and Martin will be in the house for a chat. The man has many stories to tell and a whole lot of knowledge, so be sure to come bend his ear.

If you really want to go deep on wild mushrooms, Martin will be out on a few ‘mushroom meanders’ over the weekend too. It’s a beautiful way to commune with nature and learn about our forests. Head to for more.

Special Event! ~ Mother’s Day Brunch.

Treat your mum, mum figure, friend or lover to brunch this Sunday.

The menu is short and sweet (and savoury!) and we’ll have coffee from friends and Northbridge neighbours .

Bookings pretty much essential, with a few very limited spots for walk-ins. Our last brunch booked out in a few hours, so - you know what to do.

Our resident musical talent, Alex joined us in August last year after moving here from the US. He’s got 10 years’ experience working in old world New York dining (we’re talking table-side meat carving in the Flatiron District), and more recently ran a farm to table restaurant in South Carolina.

Alex has a voice of smooth and soothing tones and brings an understated pleasantness to service.
