NEXT CHEF IN RESIDENCE: Vince Conjaerts ~ 2 – 13 October ~
It’s a spring miracle! Chef Vince Conjaerts is coming to the Wines of While kitchen for two weeks only, marking his first time cooking in Perth since 2019.
We’ve been following Vince since his time at Darryl Naidu’s pioneering Subiaco restaurant New Normal, where he solidified the no-waste cooking practice that has permeated his whole career. After their closure, Vince took his talents down south where he worked for five years first as sous (with former Wines of While resident ) and then as head chef at Bunkers Beach House. There, he ran a sea food only set menu focusing on whole fish preparations, working creatively to directly source the freshest catch and use every single part of the animal.
Originally from Belgium, Vince’s interest in whole fish goes back to his time at famous Antwerp butcher , which introduced him to charcuterie and dry-ageing. Before that, he had spent nine years at the charming, old-world De Kleine Zavel and three formative years at produce-focused L’épicerie du Cirque, which shaped most of his cooking.
Before coming to Australia in 2015, he also started doing pop-up restaurants in Belgian living rooms, which spurred a love of foraging and a stronger interest in sourcing produce and how it’s grown. Living and working in WA’s south west – including for roaming dining project for his first two years here – has only fuelled that fire, along with a continued practice of making preserves and sourdough.
