Packaging!… It’s a big deal!! And it’s been wild to see how much single use plastic is used across so many industries!!.. And a big motivator from our inception to try and use enviro-friendly products... From cardboard boxes (FSC & PEFC) down to our shipping labels and packing tape, which is paper & plant-glue/water soluble based. Looks rad too!!

Whole bunch muscat of alexandria (70%) carbonic maceration for 20 days + mostly de-stemmed grenache blanc macerated for 7 days. Elevage in neutral oak for 12 months. 3 months in stainless prior to bottling.

All Defialy wines are unfiltered, unfined, wild fermented & no additions of any kind - just grapes. Alive wines to be enjoyed now.

Gruner Veltliner – Arranmore Vineyard 2023. On our tasting menu Fri + Sat nights.

Whole-bunch pressed to tank to begin wild fermentation, then transferred into older seasoned (neutral) French barriques for barrel fermentation on full solids. 100% wild yeast ferment. Full wild MLF. Occasional lees stirring. 9 weeks in oak. Bottled July 2023. Vegan friendly.
