π² Hearty Meatball Soup β the ultimate winter warmer! βοΈ
Cosy up with this rich, satisfying soup packed with juicy meatballs, tender veggies, and a flavourful tomato broth. Perfect for feeding the whole family on a chilly night!
Serves 4 | Prep: 20 mins | Cook: 20 mins
Ingredients:
π₯© 400g pork mince

2 tbsp Leggoβs Tomato Paste
π Zest of 1 small lemon
π« 1 tbsp olive oil
π² 1L chicken stock
π 500g jar Leggo's Napoletana Pasta Sauce

cup risoni pasta
π₯ 1 carrot, diced
π₯« 400g can Edgell Red Kidney Beans, drained
π₯ 1 zucchini, diced
π₯ Crusty bread, to serve
Method:
Mix pork mince, tomato paste, and lemon zest. Shape into small meatballs.
Brown meatballs in a saucepan with olive oil.
Add stock, pasta sauce, risoni, and carrot. Simmer for 10 mins.
Stir in kidney beans and zucchini. Cook for another 5 mins.
Season to taste and serve hot with crusty bread.
