WCIPA

Traditionally known for their hoppy characteristics, West Coast IPA (WCIPA) are big, bold and have
really cemented their place in the craft beer scene.

Unlike the sister style NEIPA, which are known for their citrus and tropical notes, the characteristics
of a WCIPA are a prominent hop aroma, high bitterness, and citrus and piney notes and flavors. The colour normally still retains the pale colour of an IPA.

The preferred hops (either whole-cone or pellet) used for this brew are Centennial, Cascade, Mosaic,
Amarillo, Chinook, Simcoe, Strata and even Citra. Others have the possibility of adding spicy and
wooded notes that clash with the resin and piney aromas desired.

During the brewing process the fermentation often contains higher amounts of hops in the boil
kettle (leading to the higher bitterness and mid-palate hop flavour. Another way to attain the
distinctive hop notes for the style is by the brewer adding hops to the beer post fermentation.
Whilst this does impart a little more bitterness, it mainly impacts the hop characteristics in the brew.

NOMADS GARDEN

This vintage for was especially hard as it was a constant battle fighting disease throughout the growing season, with the wet and humid start to the season. They were fortunate enough to steer clear and this resulted in fruit that had a fresh and vibrant acidity.

The grapes were grown in their Bungamero Vineyard in the Alpine Valley. Harvest occurred in March and were handpicked and sorted at the vineyard. The grapes were then chilled overnight at the winery before being pressed into stainless steel. The cuvee from the first press was kept separate from the rest of the press. This juice was chilled and then racked clean whist the pressing were put to seasoned oak for fermentation and maturation on gross lees to reduce phenolics. Wild yeast was used to assist in elements of the fermentation. After fermentation the wine was removed from the less and bottling then occurred in October.

PRE-FERMENTATION MACERATION

Also known as cold soaking, Pre-Fermentation Maceration is a process used for gentling, extracting colour, aroma and softening tannins in a wine.

Depending on the desired style the winemaker wants to make as well as varietals used, the grapes are soaked at lower temperatures prior to fermentation beginning for anywhere from a few hours to several days.This technique is commonly used for red wines, especially those made from thick-skinned grape varieties such as Cabernet Sauvignon and Syrah.

So what determines the use of this technique? Certain grape varieties have more tannins and color compounds in their skins, making them well-suited. Second, the winemaker’s desired wine style plays a part with depth of color, flavour intensity and/or tannin structure; pre-fermentation maceration can help achieve them. Lastly, the quality of the grapes also matters as grapes with good phenolic maturity, (have developed tannins and flavors), are more suitable for pre-fermentation maceration.

GRAIZERS

Grown on their historic 13000ha Cranbrook farm, which has been a consistent grazing property since 1840, Graizer’s Pinot Noir solidifies that Estate is at the forefront of Tassie winemaking.

The Pinot Noir grapes were harvested in April 2021 after a season of long sunny days and low rainfall which allowed for prime fruit development. After harvesting the grapes were crushed into open top fermenters including the use of 25% whole bunch. These were then cold soaked for 3 days prior to the addition of yeast. After the fermentation process, the wine was pressed before being aged in French barriques (20% new) for 8 months. The wine was bottled in March 2022.

Red fruit aromas of cherry and raspberry are complimented with vanilla and spice notes. Medium in body with firm tannin on the palate and a long finish. Can cellar for 5-8 years.

There are so many acronyms in the beer world that sometimes its hard to keep track, but if there is one you should try and remember it is IBU.

Inside the core of hops is a tiny yellow pod called luplin. It’s packed with resins and essential oils that are central to aroma, flavor, and bitterness in beer. The International Bitterness Units (IBU) is the number that reflects a beer’s bitterness which is derived from the bitter acids the lupulin supplies.

So how exactly can a brewer tell what IBU their brew is? To find its IBU number, the beer is extracted with an organic solvent, creating a solution that’s then exposed to ultraviolet light. The more UV light a solution absorbs, the more bitterness is present and the higher the IBU.

The scale starts at zero and goes up to 100 units. Wheat beers sit anywhere between 10-25 IBU, while some Stouts can pack more of a punch around the 60 IBU mark. The heaviest hitter is a style called Barleywines which can hit a whopping 65–100 IBU.

With Christmas edging closer it’s important to lock down the right bubbles for the day, and are here to tick that off your list

The sparkling is made of an almost even split of Chardonnay (55%) and Pinot Noir (45%) from grapes grown in their Tamar Valley vineyard. Free run juice and lightly pressed the grapes are oxidatively handled. The first fermentation is in rank and cool temperatures before being blended with some earlier vintages aged in French Oak. The wine has undergone the traditional method with the triage and second fermentation and bottle. Prior to disgorging the wine is left of lees for two years.

Full of crisp apple and citrus notes are balanced by bread and biscuits aromas with a vibrant acidity, full mouthfeel and a slaty, mineral persisting finish.
