The Man... The oyster loving Legend at large! It was so wonderful to have Mr Simon Marnie visit our finger lime farm last week. Despite the rain Simon managed to fill his pockets with some beautiful pink and green finger limes to top freshly shucked oysters at an event in the Blue Mountains. Always wonderful to catch up with old mates :)

Wanting a very simple and SUPER TASTY cocktail made with our Rosella Jam and signature Wild Hibiscus Gin?
All you need is:
๐ธ 60ml Wild Hibiscus & Ginger Gin
๐ธ 30ml Lemon Juice
๐ธ 2 teaspoons rosella jam
๐ธ Lots of ice
๐ธ Fresh berries or Wild Hibiscus Flower in Syrup to garnish
Did you know that we use the fruit and flowers grown on our farm to make our Gin?
Not only do we have over 2,000 Finger Lime Trees on our 80-acre farm, but we also grow all the native pepperberries, kaffir lime, tahitian lime, lemon myrtle and most of the other botanicals we use in our gin.
Our Wild Hibiscus Gun is distinctive and potent, with a strong tart raspberry rhubarb flavour.
Featuring deep undertones of Queensland ginger and juniper. Drink it straight over ice or dilute it with soda water, your preferred spritzer, or tonic.
As we start heading into a new season, here is a look back at Autumn last year from our 80-acre farm at Kurrajong Heights, on the edge of the Blue Mountains.

Gingle Bells Floral Gin Baubles are made by Wild Hibiscus Flower Co. Established in 1998, Wild Hibiscus create edible flower products which have paired with food and cocktails all over the world.
Gingle Bells Gin is the concept of Company Founder, Lee Etherington, taking collaboration with liquor that one step further with a gift set of infused gins.
To make Gingle Bells we start with an Australian Dry Gin made in our own distillery. The gin is then infused with six all natural and unusual botanicals to create something very special. The botanicals remain a physical inclusion in each bauble like a decoration in a little snow dome.
Gingle Bells Gin can be enjoyed simply in a gin and tonic, on the rocks or used in your favourite gin cocktail recipe.
Also included in the Gingle Bells Gift Box is a Cocktail Guide (complete with a silver ribbon) with a specialty cocktail recipe designed around each of the Gingle Bells Gin Flavours to make at home.
Make your decorations really Gingle! Each of the gin baubles have a silver ribbon laced through the lid. Gingle Bells look great tied in a secure bow to your Christmas tree, decorating the mantel piece or even around your wrist at a party but please keep Gingle Bells out of the reach of children and pets.
Donโt give them as gifts to anyone under the legal drinking age as they contain alcohol.
Please Drink & Decorate Responsibly.
