You don’t know what day it is, you’re full of cheese and leftovers, so spice things up with this tropical coffee cocktail. ☕️🍍

Method: Shake + Strain�
Glassware: Tiki

ingredients�30ml Threefold Coffee Liqueur�
30ml White Rum�
15ml Orgeat
½ Passionfruit (pulp)�
10ml Fresh Lime Juice�
90ml Pineapple Juice (fresh is best)

method�
• Add all ingredients into your shaker, fill with ice and shake hard.�
• Fill your tiki glass with crushed ice.�
• Strain into the glass.�
• Garnish with a pineapple wedge, frond and cherry.

�Fruity, boozy, a little unhinged, exactly what the festive fog ordered. 🍹😏

SNACK + SIP 🍒🏏
Episode 2 - Caramelised Christmas Pudding with Custard + Cherry Gin Spritz

Forget the French toast, this is your Boxing Day treat!

CUSTARD
• 3 egg yolks
• 50gs caster sugar
• 250ml milk
• pinch of salt
• nub of butter
• dash of Cherry Gin

METHOD
• Separate the egg yolks from the whites and whisk the yolks with caster sugar until pale and smooth.
• In a heavy-based saucepan, gently heat the milk over medium heat until just starting to steam — do not boil.
• Slowly pour the warm milk into the egg mixture a little at a time, whisking constantly to temper the eggs.
• Return the custard to the saucepan and cook over low heat, stirring continuously, until thickened enough to coat the back of a spoon.
• Remove from the heat, add a dash of Cherry Gin, a pinch of salt, and finish with a nub of butter for a glossy, silky finish.

PUDDING
• Christmas pudding
• butter
• pinch of salt
• dash of Cherry Gin

METHOD
• Slice the Christmas pudding into thick slices.
• Heat butter in a frying pan over medium–high heat until foaming.
• Add the pudding slices and cook until a deep golden, caramelised crust forms, then flip once.
• Reduce the heat to medium, deglaze the pan with a dash of Cherry Gin and add a little more butter.
• Baste the pudding in the boozy butter glaze until glossy and heated through.
• Plate the pudding, finish with a pinch of salt, and generously pour over the warm custard.

CHERRY SPRITZ
• 45ml Cherry Gin
• 60ml sparkling wine
• 90ml ginger ale
• pinch of salt

METHOD
• Add all ingredients to a wine glass.
• Fill with ice and gently stir to combine.
• Garnish with a lime wheel and plenty of cherries.
