Inside Look Part 5: The Transfer and the Boil! 🌾🍺

We’ve been recirculating for about half an hour and the clarity is spot on, which means it’s time for the transfer!

In Part 5, Matt takes us into the boil. This is where we add our hops to bring out that delicious bitterness and hoppy flavor for our Hay Bale XPA.

Inside Look Part 4: Recirculation & Clarification 🍺✨

The mash is out and it’s nice and hot, so now it’s time to start the recirculation! We’re clarifying the brew by filtering it through itself until it goes from super grainy to cloudy, and then finally nice and clear.

It takes about half an hour to get the liquid just right before it’s ready to be sent to the kettle. We’re halfway through the process—stay tuned for Part 5!

We’re officially halfway through our brewing journey! 🍻
In Part 3 of our Inside Look series, Matt Van Run takes us through the Mash Out. This is where things get steamy—literally. 💨

By raising the temp to 74°C, we’re locking in the body of the beer and prepping for the big separation. It’s all about getting that liquid away from the spent grain so we can head over to the kettle for the next stage.

If you’ve been following along with the series on our feed, you’ll know we love the details—and brewing a batch of Hay Bale XPA is no exception!

The stats so far:
Grain: 300kg Voyager Malt 🌾
pH: 5.27 (Spot on!) âś…
Next Stop: The Kettle 🔜
Stay tuned for Part 4 as we get closer to the final pour!

“Right in the zone!” 🎯🍺 We’re back for Part 2 of our 6-part Inside Look series into how Matt brews a batch of our iconic Hay Bale XPA here at our Cornella Brewery.

Matt is checking in on the mash to ensure our pH and temperature are spot on for the perfect brew.

It’s all about converting those starches into the sugars that eventually become the beer you love. 🍻

Stick around for Part 3 to see the next stage of the journey!

The Inside Look series is officially heading into the brewery! 🚜🍻

If you follow us over at , you know we love taking you behind the scenes. Now, it’s Matt’s turn to show you how we get things done at Cornella Brewery.

We’re starting at the very beginning - milling grain. Specifically, 300kg of to brew a batch of our iconic Hay Bale XPA.

28 days, 6 hours, 42 minutes, 12 seconds... that’s exactly how long we’ve been obsessing over this batch. 🌀✨

You might doubt our sanity, but you can never doubt our commitment to Sparkle Motion (and by Sparkle Motion, we mean this 7.7% IIPA). 🍻

Available now at the bar & online now (link in bio).

The past week has been tough for a lot of people around Harcourt and the wider region.

We're feeling for all our local wineries and breweries with stock lost at the Harcourt Co-op Coolstore, which includes ourselves alongside mates Love Shack, Shedshaker and Brewers Collective amongst many others. We've lost a true community asset.

Closer to home, most of the week was spent just keeping beer safe in tank through the heat — a busted compressor, rigging up extra shade and sprinklers, and doing what needed doing to get through 42, 42 and 44.

Beer can be remade. Some of the other damage caused will take a lot longer to sort through. Our thoughts are with those dealing with that right now.

There may be some short-term disruption to Hay Bale XPA availability while we reset. Thanks to everyone who's reached out. Please continue to support local.

Cheers,
Spencer & Matt

P.s Thanks to Boomtown for hosting a great fundraiser yesterday. Was a great afternoon connecting with our local wine and beer producers.
