A w**e for every palate. Which one would you taste first?

Meet the AURUM Signature Collection. Fine w**es made from Australian honey, not grapes. Each with its own character, and not as sweet as you might expect.

Sparkling Blanc de Miel Brut - Crisp and dry, with hints of lemon, freshly baked brioche and a delicate honey finish. Think Ch*****ne, with a twist.

Sparkling Rosé - Light, fresh and bubbly. Elegant and dry, perfect for those who love a refreshing glass of rosé.

Rosé de Provenance - Light, delicate and refreshing. A dry, easy-drinking rosé made for sunny afternoons and long lunches.

W**e made from honey. Surely it must be sweet?

It's the question we get asked most often. The answer? Actually no.

Just as grapes can be transformed into dry w**es, so can honey. Through fermentation and fine w**emaking techniques, we create w**es with complexity, structure and character, without the sweetness you might expect.

Why honey?

When Louis arrived in the Northern Rivers, there were no vineyards. But there was extraordinary honey - shaped by native flowers, changing seasons and the Australian landscape.

For a w**emaker, that sparked a question: what could honey become when approached with the principles of fine w**emaking?

Years of experimenting followed.
The result is AURUM. Fine w**es made from honey, not grapes.
