FEEL GOOD FRIDAY πŸ“WHITES IGA PEREGIAN BEACH

In case you missed it, earlier this week WIN News Sunshine Coast showcased the program being run by White's IGA Peregian Beach, and we think it's a phenomenal local activity that deserves another shout-out! πŸ“’

The program allowed students from Sunshine Beach State School to produce and sell their own locally cultivated microgreens at White's IGA. In addition to growing and selling their own products, the students also spoke about the benefits of eating fresh, locally grown produce. πŸ₯¬

If that wasn't enough, in addition to the educational value the students gained from the Little Locavores program, profits from the sale of their products went to support Smart Pups Assistance Dogs.

Keep up the amazing work kids, and kudos to the entire Whites IGA team! πŸ˜ƒ

Recently, the team at Ahmedi's IGA Molong made a generous donation to the Community Chest, benefiting the Molong Early Learning Centre. This contribution will assist in funding a brand-new chicken coop for their hens or a new greenhouse. πŸ”πŸŒΏ

The children thoroughly enjoyed their visit to the store, and one of the core values the centre like to instil in their students is the importance of community, which has been beautifully demonstrated with this meaningful donation. It just goes to show, the importance of supporting local. ❀️ 😊

Craving a flavourful feast that won't take forever? Then check out this comforting home-cooked delight that's feasible whether you have all day or just 30 minutes on a Friday night. 🍽️ πŸ˜ƒ

Chilli crisp pork noodles

Prep 15 min
Cook 10 min
Serves 2 people

Ingredients

For the chilli crisp sauce

3 tbsp chilli crisp with the oil
1Β½ tbsp rice wine vinegar
1 tbsp soy sauce
1 tbsp white miso
1 tbsp tahini
1Β½ tsp sesame oil
Β½ tsp white sugar
Zest of 1/4 medium-sized orange

For the crispy pork

2 tbsp neutral oil, such as canola or peanut oil
250g lean pork mince
2 garlic cloves, peeled and minced
2 tsp ginger, peeled and grated
Β½ tsp fennel seeds
Β½ tsp ground cumin
Β½ tsp ground coriander

2 x 85g packets of instant noodles, such as Indomie or Maggi (noodles only; save the flavour sachet for another use)
Small handful of coriander leaves
Small handful of crispy fried shallots

Method
1. In a medium bowl, combine all ingredients for the chilli crisp sauce and stir well. Set aside.

2. Bring a medium saucepan of salted water to the boil.

3 .Heat a medium frying pan over high heat with the oil. Once hot, add the pork mince and cook until it begins to turn golden brown, stirring regularly for five to six minutes. Reduce the heat to medium and add the garlic, ginger, fennel seeds, ground cumin and ground coriander. Cook until fragrant, stirring often for one to two minutes. Remove from the heat.

4. Add the instant noodles to the boiling water and cook according to the packet instructions. Drain, reserving a little of the cooking water.

5. Take two serving bowls and divide the chilli crisp sauce and crispy pork between them, then add 1 tablespoon of noodle water to each bowl. Divide the noodles between the two serving bowls. Just before serving, mix well to combine, and then garnish with the coriander leaves and crispy shallots.

Beyond proud that IGA retailers across NSW have banded together to donate $100,000 to Vinnies NSW to help provide support to those affected by the recent floods. Vinnies are using these funds in Recovery Access Points in Taree, Maitland and Kempsey, providing immediate cash support to those impacted, and will remain on the ground providing ongoing support as the clean up continues. πŸ₯°πŸ‘

Winter is officially here and so is the need for hearty meals! This quick, easy and budget friendly Creamy Pesto Chicken Linguini will keep the whole family happy! πŸ˜‹ 🍲

Prep time: 5 Mins
Cook time: 30 mins
Serves: 4

Ingredients:
400 g linguini
500 g chicken breasts, chopped or chicken stir fry strips
300 ml tub cream
1/4 cup basil pesto

Method:
1. In a large pot of boiling, salted water cook the linguini according to packet directions.
2. Meanwhile, in a nonstick frying pan, sautΓ© the chicken until golden, 4 to 6 minutes.
3. Add the cream and reduce heat, add basil pesto and simmer for 5 minutes.
4. Add the linguini and toss to coat in the yummy sauce.
5. Sprinkle with fresh basil and Parmesan to serve.

Nineteen years ago, store owners Peter and Jackie helped a local family by providing funds for their daughter Keira, who was dealing with challenges from multiple disabilities.

Time to unleash your culinary creativity this autumn with a vibrant medley of yummy roasted seasonal vegetables. πŸ§„πŸ§…

Prep time: 20 mins
Cook Time: 55 mins
Serves 8*

Ingredients
2 tbsp extra virgin olive oil
1 kg Japanese pumpkin cut into wedge
1 head of garlic, halved
5 roasting potatoes, cut and peeled
2 jazz apples, quartered
2 spanish onions, cut into wedges
3 sprigs rosemary
1 tsp lemon thyme leaves
1 tsp salt

Method
1. Preheat the oven to 190Β°C.
2. Toss all the ingredients together (except lemon thyme) to coat.
3. In a large roasting tray, place just the potatoes, and roast for 15 mins.
4. Add the rest of the vegetables, roast for another 40 mins.
5. Take them out of the oven, and whilst hot, toss in the lemon thyme leaves.

*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed 😊

With the weather getting cooler, this simple recipe is a great way to warm up while enjoying the natural sweetness of autumn vegetables with a touch of indulgence! πŸ– πŸ˜ƒ

Ingredients
1 sweet potato, peeled and cut into 1-inch cubes
2 bunches baby Dutch carrots, trimmed
6 shallots, peeled and halved
2 tbs olive oil
1/2 tsp dried thyme
1/4 tsp smoked paprika
Salt and freshly ground black pepper
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method
1. Preheat oven to 200Β°C. Line a baking tray with baking paper.
2. In a large bowl, toss the sweet potato cubes, carrots and shallots with olive oil, thyme, paprika, salt and pepper.
3. Spread the vegetables in a single layer on the prepared baking tray.
4. Roast for 40-45 minutes, or until the sweet potato is tender and the carrots and shallots are golden brown and caramelised, stirring halfway through cooking.
5. Remove from oven and serve with your Family Chef Roast Pork and some gravy and enjoy!

Crispy Crackle
1. Pre-heat oven to 240Β°C or set oven to grill.
2. Remove crackle from roast pork.
3. Try and lay the crackle (golden side facing up) as flat as you can on a foil lined baking tray.
4. Crackle should turn puffy and crisp within 5 minutes (but you do need to watch the crackle as it can burn quite quickly).
