Try this low effort Slow Cooker Thai Beef Curry recipe - Just set and forget! π₯©π
Ingredients:
1.35kg boneless beef chuck roast, diced
50g red curry paste
350g coconut milk
120g peanut butter
2 tbsp soy sauce
190ml beef stock
2 tbsp honey
125g sugar snap peas, trimmed
1 red pepper, sliced
2 tsp fresh ginger, minced
1 tsp salt
1 tsp pepper
Optional: fresh coriander
Instructions:
Season the beef with salt and pepper, then transfer it to a slow cooker along with the red pepper slices.
In a medium bowl, whisk together the red curry paste, peanut butter, coconut milk, honey, soy sauce, beef stock, and ginger. Pour this mixture over the beef in the slow cooker.
Cover and cook on low for 7-8 hours, until the meat is tender.
Stir in the sugar snap peas. Cover and cook on low for an additional 40-60 minutes, until the peas are crisp-tender.
Stir in the fresh coriander just before serving.
