Did you know sake and wine have more in common than most people realise?

FROM RICE TO VINE: ONE MAKER, TWO WORLDS

Most people spend a lifetime mastering one craft.

Wine.
Or sake.

Matt Froude chose both.

After years immersed in Japan’s sake culture, Matt returned to Australia to study winemaking and eventually founded Municipal Wine & Sake, a project built around letting ingredient and place speak for themselves. Today, he crafts cool-climate wines in Victoria while producing sake in Japan, making him one of Australia’s few producers genuinely working across both worlds.

For one night only, Matt joins us to guide a journey from vineyard to kura, exploring the unexpected similarities between sake and wine. By blending a winemaker’s sensitivity to texture and place with a brewer’s understanding of fermentation and precision, Matt challenges traditional ideas of what these drinks “should” be.

The line-up:

🍶 Love Mountain Sake (Aiyama Rice)
Often called the “Pinot Noir of sake rice” — elegant and expressive with layered fruit, silky texture and hidden depth.

🍶 Snow Mountain Sake
Traditional Kimoto brewing creates savoury complexity with mineral notes, gentle florals and a long, structured finish.

🍷 2022 Savagnin
A variety with a cult following. Bright acidity, citrus, orchard fruit and texture, showing why Matt has become strongly associated with Savagnin in Australia.

🍷 2022 Pinot Gris
Fresh yet textural, balancing lifted aromatics with mouthfeel and subtle complexity.

🍷 2021 Tempranillo
Vibrant red berries, spice and savoury herbs in a lively, food-friendly style.

🍷 2016 Reserve Tempranillo
A more mature expression with leather, sweet spice, dried fruit and bottle-aged complexity.

🍷 2021 Flor Savagnin
Probably one of the most intriguing wines of the night. Aged under flor yeast, bringing nutty, savoury and oxidative layers that challenge expectations. Matt has become particularly known for these styles.

Step into three rising Asian distilleries across China, Japan, and Korea—each redefining what modern whisky can be. Not just a tasting but an exploration of how emerging regions shape identity through deliberate production choices—from cask innovation to raw materials and climate.

Challenging tradition while respecting its foundations, these distilleries are carving distinct paths and writing a bold new chapter in the modern whisky world.



🇨🇳 LAIZHOU — Cask Influence as Structure
A modern Chinese distillery operating in a warmer continental climate, where maturation is accelerated and cask interaction becomes dominant early.

Key idea: cask selection defines the whisky
• Fino → Dry, nutty, saline
• Bourbon → Vanilla, honey, coconut
• Amontillado (CS) → Dried fruit, spice, richness
