building circa 1882, Armadale Cellars is the jewel in the crown of Melbourne's great wine destinations. The original underground cellar is full of atmosphere and is used on a regular basis to showcase the great wines of the world, whilst the outdoor courtyard provides a wonderful space for the many wine related events held throughout the year. WELCOME TO WEEKLY RECIPES🍷
Every Wednesday you can look forward to a delicious recipe featuring our favourite vinos. To kick us off, the perfect winter warmer, Beef Burgundy Pot Pie. This rich, slow-cooked beef pie is the perfect partner for Feathered Friends. The wine’s depth and dark fruit notes melt beautifully into the silky red wine sauce, while the buttery pastry and slow-braised create the kind of hearty winter comfort that makes both the dish and wine feel even more luxurious.

Beef Burgundy Pot Pie
Serves: 4–6
Prep time: 30 mins
Cook time: 3 hrs

Ingredients
1kg Mugavin beef chuck or gravy beef, diced
2 tbsp olive oil
1 brown onion, diced
2 carrots, sliced
3 garlic cloves, chopped
200g mushrooms, sliced
2 tbsp tomato paste
2 tbsp plain flour
2 cups Feathered Friends Shiraz Cabernet
2 cups beef stock
2 tsp thyme leaves
2 bay leaves
Salt and black pepper
1 sheet butter puff pastry
1 egg, beaten

Method
Preheat oven to 160°C.
Heat olive oil in a heavy pot and brown beef in batches. Remove and set aside.

Add onion, carrot, garlic and mushrooms. Cook until softened.
Stir through tomato paste and flour.
Return beef to the pot and pour in red wine and stock.

Add thyme, bay leaves, salt and pepper. Cover and cook for 2.5 hours until beef is tender and sauce is rich.
Spoon mixture into a baking dish and top with puff pastry.

Brush with egg wash and cut small slits in the top. Bake at 200°C for 25–30 minutes until golden and crisp.

HAPPY INTERNATIONAL CHARDONNAY DAY!

Celebrate the marvellous day with a team favourite, Domaine AC Bourgogne Blanc. Bright lemon yellow in appearance. Appealing nose of citrus blossom, green apple and pear. Judicious oak sits in the background. Wonderfully textured palate, fresh and bright, apple orchard fruit to the fore, Beurre Bosc pear, roasted hazelnut and spice. A fine line of acidity provides lift and carries the finish, which is long and satisfying. More please!
