Don’t stress though… We’re delivering all day tomorrow - and our 6pm cut off still applies to most of inner Sydney - 3pm cut off for the rest. I’ve (Joel) been talking about doing this for a about a year... So our first Natural Information in 2025 is a deep dive into Amaro!
What’s Amaro? Just the most deliciously herbal digestif liqueur ever made. It’s basically a maceration of wine and / or spirit with herbs and other things (famous recipes are kept secret through generations).
Generally within the bitter-sweet realm, some brands lean more on the sweeter side (Pierre), while others purposely dial up the bitter vibe (Joel), giving a more medicinal end product.

Majama Wines are red hot.

Rojer Rathod makes wine in the Hunter Valley as a day job. Millie Shorter is a graphic designer that specialises in textiles. Together, they are Majama Wines. Majama means happy”, “enjoyment” or “fun” in the local language of Gujarat - where Rojer is from.

They’re mainly working with Sicilian varietals - a lot of these grapes are more suited to our warming climate in Australia. All fruit is hand harvested and only a tiny amount of preservative is used to provide some stability in the final product. Everything is made up in the Hunter.

We’re taking over downstairs @ Bitter Phew with none other than the inimitable GASPAR HOTLUCK. Pierre and I are going to be pouring some fun things and some rare things. Bitter Phew are going to be pouring the best cold ones in the business… And big GASPAR is going to be cooking some of the best hot ones ever. Starts at 5pm and everyone is welcome.
