Today we say goodbye to someone who has become so much more than part of our team — Ebony has become part of our family.

It’s hard to put into words just how much she has given during her time with us. The early mornings when most people were still asleep, the late evenings when everyone else had gone home, the countless hours spent planning, organising, and making sure everything ran the way it should. So much of what people see and enjoy has Ebony’s care and effort quietly woven into it, often without recognition, and always done with heart.

But what we will miss most isn’t just the work — it’s Ebony herself. The kindness she brings into a room, the way she checks in on people, the laughter, the calm during busy moments, and the genuine care she shows to everyone around her. She has helped shape not only what we do, but who we are as a team. Places are built by people, and Ebony has left a piece of herself here that will always remain.

Watching you move on to the next chapter of your journey fills us with both pride and sadness. We are so proud of you for chasing what’s next, even though it’s hard to imagine this place without you in it every day. Please know that this will always be a place you can come back to — not as a former employee, but as family.

After 3 and a bit years, it’s time for us to say goodbye to our Head Chef, Jeff and this one isn’t easy.

Jeff has been a huge part of our journey. He’s poured his time, energy, and heart into this kitchen, often behind the scenes, always putting the team and the food first. From the early starts to the late finishes, the pressure of busy services to the quiet wins no one else sees, Jeff has shown up time and time again with dedication and pride in what he does.

More than just a head chef, Jeff has been a leader, a mentor, and a steady presence in our business. He’s helped shape who we are today, and his influence will be felt long after his last service with us.

We are seeking an accomplished and forward-thinking Chef to lead our tavern kitchen and help redefine what a modern tavern menu can be. This role is ideal for a chef who values quality, creativity, and innovation, while still respecting the foundations of great food.

The Role
• Lead the preparation and delivery of high-quality, consistent dishes across lunch and dinner service
• Develop and execute creative, innovative dishes that elevate and modernise the traditional tavern menu
• Contribute to menu development, seasonal specials, and continuous culinary improvement
• Provide leadership and mentorship to two apprentice chefs, supporting their training and development (both just completed their second year at TAFE 2025)
• Maintain strong standards in food presentation, portion control, and kitchen efficiency
• Ensure full compliance with food safety, hygiene, and HACCP requirements
• Work collaboratively with management and front-of-house teams to deliver an exceptional guest experience

About You
• Trade-qualified Chef with proven experience in a professional kitchen environment
• Demonstrated ability to create innovative dishes while working within a tavern or high-volume setting
• Passionate about food quality, creativity, and pushing culinary boundaries
• Confident leader with experience mentoring or supervising junior kitchen staff
• Strong organisational and time-management skills
• Reliable, professional, and adaptable, with flexibility to work evenings and weekends
