The last of our varietals has arrived.

Coastal Mallee Raw Honey is harvested from Eucalyptus diversifolia, a winter-flowering coastal mallee that helps keep the bees busy through the colder months.

The nights may be cold and the days short, but when the sun is out, the bees are straight to work collecting nectar and pollen from the creamy mallee flowers.

The result is a rich, layered honey with earthy complexity, native floral notes and a bold eucalyptus character, a darker, more distinctive finish that reflects the coastal mallee country it comes from.

The last of our varietals is almost here.

Coastal Mallee, also known as Eucalyptus diversifolia, is one of those special winter-flowering gums that keeps the bees moving when much of the landscape is quiet.

The nights are cold and the days are short, but when the sun comes out, the bees get straight to work — collecting nectar and pollen from the creamy coastal mallee flowers and building strength for the season ahead.

It’s a reminder that even in the middle of winter, the bush is still busy.
