Soft, fluffy, warmly spiced… this carrot cake is everything.

You’ll need 🛒
🥕 2 cups finely grated carrots
🧂 Cinnamon • Nutmeg • Ginger • Allspice
🍬 1 cup sugar + ¾ cup brown sugar
🥚 3 eggs
🫙 ⅔ cup oil
🥣 ⅓ cup yoghurt
🍁 ¼ cup maple syrup
🌾 Flour • Baking powder • Baking soda • Salt
🌰 Walnuts (optional)
🍥 Cream cheese frosting (cream cheese • lemon • icing sugar)
How to make it 👩🍳
1️⃣ Grate carrots finely (the secret to that soft crumb).
2️⃣ Mix carrots + sugar + eggs.
3️⃣ Add oil, yoghurt & maple syrup.
4️⃣ Whisk dry ingredients separately.
5️⃣ Combine gently — don’t overmix.
6️⃣ Fold in walnuts.
7️⃣ Bake at 180°C until golden + skewer comes out clean.
8️⃣ Frost with thick, tangy cream cheese frosting 🤍
