๐ฅฃ 480g plain flour
๐ฅฃ 2 x 10g instant yeast sachets
๐ฅฃ 100g brown sugar
๐ฅฃ 1/2 tsp ground cinnamon
๐ฅฃ 1/2 tsp ground nutmeg
๐ฅฃ Pinch of salt
๐ฅฃ 1/2 tsp baking powder
๐ฅฃ 1/2 tsp bicarbonate of soda
๐ฅฃ Zest of 1 lemon
๐ฅฃ 1 1/4 cups milk
๐ฅฃ 3 tbsp butter
๐ฅฃ 2 free-range eggs
๐ฅฃ 1 tsp vanilla extract
๐ฅฃ 135g sultanas and raisins
๐๐ผ๐ฟ ๐๐ต๐ฒ ๐๐น๐ผ๐๐ฟ ๐ฃ๐ฎ๐๐๐ฒ:
๐ฅฃ 125g plain flour
๐ฅฃ 5 tbsp water
๐๐ผ๐ฟ ๐๐ต๐ฒ ๐๐น๐ฎ๐๐ฒ:
๐ฅฃ 65ml golden syrup
๐ฅฃ 65ml boiling water
๐ ๐ฒ๐๐ต๐ผ๐ฑ:
1. Preheat the oven to 180ยฐC
2. In a large bowl, combine the flour, yeast, brown sugar, cinnamon, nutmeg, salt, baking powder, bicarbonate of soda, lemon zest, and dried fruit.
3. In a saucepan, gently heat the milk and butter until the butter has melted. In a separate bowl, whisk together the eggs and vanilla extract. Add both the milk-butter mixture and the egg mixture to the dry ingredients.
4. Stir the mixture with your hands or a wooden spoon until a dough forms.
5. Transfer the dough to a clean surface and knead for about 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with plastic wrap, and set aside in a warm spot for 1 1/2 hours or until doubled in size.
6. Once the dough has risen, punch it down to release the air and divide it into 12 even pieces. Shape the pieces into buns and arrange them on a greased baking tray. Cover with clingfilm, leaving space between the buns for expansion. Let them rise for another 30 minutes.
7. To make the flour paste, mix the flour and water to form a smooth paste. Transfer the paste to a Ziploc bag, snip off one corner to create a piping bag, and pipe a cross over each bun.
8. Bake the buns for 15 minutes, or until they are golden and cooked through.
9. While the buns are baking, prepare the glaze by mixing the golden syrup and boiling water together.
10. Once the buns are out of the oven, immediately brush them with the glaze while they are still hot.
