Did you know? How to produce cognac?

From vineyard to final blend, cognac production is a long and sensitive journey. After harvesting ugny blanc grape varieties, the grapes undergo double distillation to obtain the eaux-de-vie. During the ageing, the cognac undergoes a rapid passage in new barrels to keep the natural aromatics of the eaux-de-vie. It will then be transferred into old barrels to continue its development in a humid cellar to promote its roundness and accentuate the rancios.
