Magic Melbourne momments🎉

When in Melbourne last week for a wedding, we met up with and restaurant and wine bar,one of Australia's oldest family run wine bars and home to legendary pours, ghost stories, and more wine wisdom than a sommelier’s diary. We had some great wines, plenty of laughs, and a long-overdue catch-up.

Thanks, Tim, for the perfect venue pick for rallying the crew and the great tour the next day🙌 Thanks Carmel for the belly laughs and brilliant tips on the Geelong and Bellarine wine region. And Bonnie—thank you for my masterclass in nighttime photography 📸🤣 I now know how to make a streetlamp look like a moonbeam👌🤣🙌

It was such a fun night in a historic venue. Cheers to catching up with like-minded friends in real life,where the wine flows, the stories grow, and the photos get increasingly blurry🤣👌

Gochujang pork fried rice and soju🙌

This combo is so Korean it might even ask you to take your shoes off👌

My seoul mate inspired me for this pairing after he sent me this great bottle of Hwayo 25 Soju👌👏

This isn't just a spirit,its a seoul whisperer. One sip and you're Hwayo-ver the moon 🌙 Its the kind of pour that says Hi there, Hwayo doing🥃 Clean,crisp, and classy🙌
Every bite of this dish is a seoul searching journey through crispy rice,tender pork,the Goshujang sweet,spicy ,unami packed flavours,like a Korean auntie who's judging your lifes choices but feeding you anyway🤣

You'll want seoul custody of this pairing🙋‍♂️Lets soju the way to flavour town together because once you’ve tasted this, you’ll be gochu-jangin for more.

Spring has Osso-fically arrived ☀️🍷🌻

This slow braised beef osso buco was so tender it practically fell apart faster than my spring cleaning plans👌Rich,comforting and deeply satisfying and like a warm hug from nonna herself🙌

Paired with the sass-ily smooth Tenuta Sassoregale 2022 Sangiovese from Maremma Toscana🍷Bright,cherry,rustic earth, and just enough Tuscan charm to make your taste buds shout mamma mia🙌

Spring’s all about balance,warming comfort with fresh brightness.Beef that melts, peas that pop, and herbs that enhance☀️

Marrow or less,here's the recipe,

beef shanks
2 tbsp olive oil
1 bunch of sweet vidalia onion chopped
2-3carrots chopped
2-3 garlic cloves minced
1 tbsp tomato paste
1 cup red wine
2 tsp salt
1/2 tsp black pepper
1 tbsp flour
few sprigs of fresh tarragon or thyme
potatoes cubed
1 cup green peas
1 tbsp fresh parsley
Beef or vege broth.
Salt and pepper

Rubbed,tossed, and Tumbarumba'd🙌

Citrus Clause: The Salmon Amendment
For a dish that rewrites the rules of sweet, spicy, and zesty.

You know we are looking for the next great salmon dish, and it might be just this🙌

Sweet & spicy paprika-rubbed salmon, seared to caramelized perfection.
Served with mandarin & pear balsamic salad and grapefruit,capsicum salsa.

Paired with the 2024 Collector Ledger Grùner Veltliner, Tumbarumba.

The salmon gets the VIP treatment,paprika, garlic, cayenne, and brown sugar form a rub that’s sweet, spicy, and seared like it’s got somewhere fabulous to be. The mandarin and pear balsamic salad tosses in juicy charm and tangy attitude,pear-fectly poised and dressed to zest.

Then, the grapefruit salsa crashes the party with bold citrus, capsicum pepper crunch, and heat. It’s sweet, tart, and just spicy enough to make your palate perk up and say, Wait, what’s this?

Enter the 2024 Collector Ledger Grùner Veltliner from Tumbarumba.Lime, white grapefruit, green apple, and a flick of white pepper. Minerality so crisp it could co-host a cooking show. It doesn’t just pair,it pears, grape-fully, and zestfully.
