——

“Until It Dies, Until It Ends”

Speak in tongues over the torso of the world
let your voice be magnificence
cover us in your vibration
don’t wait for everything to align
gather the pieces on your own
like a spiral of universe
understand our purpose
like the one who came to die
kiss the sun with your two-legged tongue
dig into the moon scratching upward
don’t wait for time to run out
you are clay and maker
you are fire and home
you are a lovestruck mantis
in this festival of love.

Poem by Fernando Valdivieso
‘Binnizá’ (People of the Clouds) poet and translator

I am the woman born of herself.
I am the woman who fell alone.
I am the woman who waits.
I am the woman who observes.
I am the woman who looks within.
I am the woman who sees beneath the water.
I am the sacred swimmer
for I swim in the vast and the unseen.
I am the moon woman.
I am the woman who flies.

Poem by María Sabina (1894–1985)

A Mazatec wise woman, guardian of the sacred language of mushrooms and healing chants. From the mountains of Oaxaca, her voice crossed borders and opened portals—not only healing bodies, but transforming how we understand the bond between word, nature, and spirit.

Poema “Xquenda”
que significa “Alma” en Diidxazá
de la poeta zapoteca Paula Ya López

Mi alma no tiene dueño,
como las fieras del monte
que no se dejan domar.
Soy la flor que nadie corta,
el agave que da vida
y después, fuego.

———

Poem “Xquenda”
which means “Soul” in Diidxazá
by Zapotec poet Paula Ya López.

My soul has no master,
like the wild beasts of the mountain
that refuse to be tamed.
I am the flower no one dares to cut,
the agave that gives life
and then, fire.

The eagle is one of the highest-flying birds; for this reason, it is regarded as a direct messenger between the human world and the spirit world.

It is believed to carry prayers to the Great Spirit (Wakan Tanka), bringing to us the gift of wide vision and spiritual discernment.

——

How do agaves survive with so little water?

Unlike most plants, agaves have a brilliant water-saving strategy: they perform photosynthesis at night. They open the pores on their leaves—called stomata—after the sun has set, capturing carbon dioxide in the darkness and storing it to convert into energy during the day.

This mechanism, known as CAM metabolism, allows them to minimize water loss through evaporation. Thanks to this adaptation, many agave species in Oaxaca can survive on as little as 250 mm of rain per year and endure long periods of drought.

A true botanical miracle of the desert—and yet another reason to marvel at the natural intelligence of the maguey.

Mezcal Noble Coyote

Noble Coyote is a premium artisanal mezcal from the cradle of mezcal – the village San Luis Amatlán in Oaxaca, Mexico. Four different types of agave – Espadín, Tobalá, Jabalí and, naturally, Coyote – are used to hand-craft four magical single-origin mezcals. Our Maestro Mezcaleros carefully select the best wild and semi-wild agaves and employ the knowledge that has been passed down to them through the generations to painstakingly cook and distill artisanal mezcals having complex flavor profiles that separate our superior mezcals from the rest of the pack. Every bottle of Mezcal Noble Coyote identifies the Maestro Mezcalero that made the mezcal, the village in which it was made, the type of agave used, and the lot and bottle number. In addition, our Maestro Mezcaleros personally sign the labels as a guarantee to you of their commitment to the authenticity of their ancient craft. Each of our distinctive and unique mezcals reflects the spirit of the clever, crafty and mystical coyote. See for yourself if the luck of the coyote is with you.

Noble Coyote is concerned with the sustainability of mezcal and is proactively involved in ensuring its future. Among other things, we have created and maintain a seed bank for wild agave. We also cultivate species and varieties of wild agave and devote considerable effort to reforesting the land with wild agave. Noble Coyote dedicated to giving something back to the Earth.
