/源起 /

1443 年的法國正處於百年戰爭的尾聲,土地滿目瘡痍,四處可見飢荒與貧窮。當時布根地公國的宰相 Nicolas Rolin 決定建造一座醫院服務窮人。然而,經營醫院需要龐大的開支;於是宰相捐贈了第一塊葡萄園。隨後的五百年間,無數的貴族、將軍與地主為了尋求救贖或感念恩德,紛紛遺贈土地。如今伯恩濟貧院擁有的 60 公頃土地中,有 85% 是頂尖的一級園(1er Cru)與特級園(Grand Cru)。

/ 包桶拍賣會 /

Hospices de Beaune只負責種葡萄與釀出初酒,後續的熟成,完全由買家決定。因此拍賣標的成品酒「一整桶(約228公升)」為尚在熟成階段的「生酒」;後續的熟成完全由買家決定。

因此得標後買家必須思考這款酒「會用多少比例的新橡木桶」「想要更強結構或是優雅細緻」、「想要陳年數年或年輕時即適飲」等問題。選了一家酒莊等同於選了一種風格。選定了酒莊,這桶酒會被移送至你委託的酒商地窖。

當熟成完成後,合作酒莊將會負責裝瓶。酒標上將印有: Hospices de Beaune / 葡萄園名稱 / Cuvée(通常紀念捐贈者姓名) / 負責培養酒液之酒莊。Hopsices 的包桶葡萄酒不僅僅是買酒,而是結合了「中世紀慈善制度」、「布根地風土哲學」、「現代拍賣市場」、「個人化釀酒參與」的獨特文化。

Monthelie,正是理解這份精神最純粹的入口。這裡沒有討好市場的濃郁與甜熟,而是一種回歸黑皮諾本質的選擇:野生覆盆子、紅醋栗與黑櫻桃的清亮香氣,乾淨、透明,彷彿能看見風土本身的輪廓。

真正令人著迷的,是時間帶來的轉變。幾年陳放後,酒液悄然綻放出牡丹與枯萎玫瑰的花香,交織著細緻的土壤與煙燻氣息,優雅而克制,毫不張揚。這是一款需要耐心對話的紅酒作品。

口感上,它展現出近乎藝術品般的平衡。單寧如絲綢般細膩,並非來自強烈萃取,而是溫柔浸潤的結果;酸度則像骨架般撐起整體,使酒體挺拔而富有張力。這種「輕盈卻有力量」的矛盾感,正是Monthélie最迷人的地方——比起 Volnay 的圓潤,它更銳利、更敏感,甚至帶點神經質的精準。Coche Dury 使用橡木桶,不為增添風味,而是讓酒呼吸、成長。初開瓶時偶爾出現的微妙還原氣息,很快會轉化為晶瑩剔透的純淨度,彷彿霧氣散去後的清晨空氣。

【與 Vavin 一同走進法國四季的節奏】

在法國被俗稱為「可麗餅節」(Fête de la Crêpe) 是一個於二月慶祝的重要節日——聖燭節(La Chandeleur)。這一天象徵著冬去春來,也將上一年的麵粉化作金黃可麗餅,祈願新一年的豐收與希望。

在這一天食用金黃色的可麗餅,不只是味覺享受,更蘊含對自然循環的敬畏。圓潤、燦亮的可麗餅宛如小太陽,象徵日照漸長與新生的希望。

享用可麗餅時,法國人也常搭配冰涼的蘋果酒(Cidre)。由於當地氣候盛產蘋果,而清爽果酸與細緻氣泡正好完美平衡可麗餅的濃郁奶香。

在今年二月的第一個週末,Vavin 將「可麗餅節」的重要元素們都搬進了店裡!到場除了可以品嚐新鮮客製的可麗餅與道地蘋果酒,更可以與我們、親友共享新年的溫暖與祝福。

【Step into the Rhythm of the French Seasons with Vavin】

In France, February marks the celebration of La Chandeleur, also affectionately known as Fête de la Crêpe. This cherished tradition symbolizes the transition from winter to spring, transforming the last of the previous year’s flour into golden crêpes as a wish for abundance and renewal in the year ahead.

The golden crêpe reflects a reverence for nature’s cycles. Round and radiant, the crêpe resembles a small sun, embodying longer days and the promise of new beginnings. Crêpes are also traditionally paired with a glass of chilled cider (Cidre). Thanks to France’s apple-rich regions, the cider’s crisp acidity and delicate bubbles offer the perfect balance to the crêpe’s rich, buttery notes.

On the first weekend of February, Vavin brings the essence of La Chandeleur into our space. Join us to enjoy freshly made, customized crêpes & authentic French cider, and to share the warmth and blessings of the new year with friends and loved ones.
