Ginisang Monggo Recipe
Ingredients
* 1 cup monggo (mung beans)
* 5 cups water
* 3 cloves garlic, minced
* 1 medium onion, chopped
* 2 tomatoes, chopped
* 1 cup malunggay leaves
* 150–200g pork, shrimp, tinapa, or chicharon (optional)
* 1 tbsp fish sauce (patis)
* Salt
* 1 tbsp oil
Instructions
1. Cook the monggo
Wash monggo then boil in water until soft and slightly thick, around 30–40 mins.
2. Render the pork fat
In a pan, add pork belly over medium heat. Let it cook slowly until it releases its own oil and slightly browns.
3. Gisa the aromatics
Using the pork fat, sauté garlic, onion, and tomatoes until fragrant and soft.
4. Combine
Add the cooked monggo with its broth. Simmer for 5–10 mins.
5. Season
Add patis/ salt to taste.
6. Add greens
Stir in malunggay and cook briefly until wilted.
7. Optional toppings
Top with crushed chicharon for extra sarap 🤤
